Site: Food Service General-Flies
Violation: Flies were found in the following food-service areas: Deck 16 - Big Chicken Galley - One fly above the flat-top grill. Deck 16 - Street Food Galley - One fly in the area. Deck 8 - Cucina del Capitano Galley - One fly around the counter-mounted mixer near the stacked ovens. Deck 8 - Bar 820 Pantry - One fly in the area. Deck 8 - Guy's Pig & Anchor - One fly was around the buffet line. Deck 8 - Deli Grill Pantry - One fly in the area. Deck 6 - Festivale Galley - One fly near the gelato machine and two near the utility sink.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in food areas.

Violation: The left hot plate's sealant was recessed and had more than a day's worth of food debris in the recess. The area was cleaned and sealant was reapplied before the end of the inspection.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and are designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: The atmospheric air vents on the backflow prevention device for the prewash spray hose were clogged. This was corrected before the end of the inspection.

Violation: The vegetable slicer machine had slotted fasteners on the food-contact surface.
Recommendation: Use low profile, nonslotted, noncorroding, and easy-to-clean fasteners on food-contact surfaces and in splash zones. Prohibit the use of exposed slotted screws, Phillips head screws, or pop rivets in these areas.

Violation: Water pooled on the deck beneath the buffet hot line. The source of the water was unknown.
