Site: Potable Water-POTABLE WATER TANK
Violation: THE RECENT RECORDS FOR THE POTABLE WATER TANKS DID NOT INDICATE THE FREE CHLORINE RESIDUAL, THE CONTACT TIME, OR THE FLUSHING.
Recommendation: Ensure that the disinfected parts of the system are flushed with potable water until the free residual halogen is 5.00 mg/L (ppm).

Site: Provisions-DECK 4 PASTRY
Violation: THERE WERE NO LOGS DOCUMENTING THE COOKED, POTENTIALLY HAZARDOUS FOOD (PHF) COOLING TEMPERATURES AND TIMES. EXAMPLES OF PHFS IN THE PASTRY INCLUDE CREAM FILLED PASTRIES, CHEESE CAKES, CUSTARDS, ETC.
Recommendation: Ensure that cooling is accomplished using one or more of the following methods based on the type of food being cooled: (1) Placing the food in shallow pans; separating the food into smaller or thinner portions; using blast coolers, freezers, or other rapid cooling equipment; stirring the food in a container placed in an ice water bath; using containers that facilitate heat transfer; adding ice as an ingredient; or other effective methods.

Site: Galley-DECK 5 FOUR SEASONS JUICE STATION
Violation: THE THERMOMETER LOCATED IN THE WMF COFFEE MACHINE'S MILK DISPENSER WAS OUT OF CALIBRATION. THE THERMOMETER REGISTERED 50F. THE AMBIENT AIR TEMPERATURE WAS MEASURED WITH A STEM THERMOMETER AND WAS FOUND TO BE 38F. THE MILK TEMPERATURE WAS MEASURED AND FOUND TO BE 38F. THE THERMOMETER WAS REPLACED AT THE TIME OF THE INSPECTION.
Recommendation: Ensure that food temperature measuring devices: (1) That are scaled only in Celsius or dually scaled in Celsius and Fahrenheit are accurate to 1C in the intended range of use; and (2) That are scaled only in Fahrenheit are accurate to 2F in the intended range of use.

Site: Galley-DECK 5 FOUR SEASONS JUICE STATION
Violation: THE WMF COFFEE MACHINE REFRIGERATOR DOOR'S INTERIOR INSULATION PANEL WAS FOUND SEPARATED FROM THE DOOR, MAKING CLEANING DIFFICULT. THIS WAS REPAIRED AT THE TIME OF THE INSPECTION.
Recommendation: Ensure that multiuse food-contact surfaces are: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Site: Galley-DECK 5 POT WASH STATION
Violation: THE POTWASH, MACHINE MOUNTED WASH AND RINSE TEMPERATURE GAUGES WERE NOT FUNCTIONING. THE INTERNAL, UTENSIL SURFACE TEMPERATURE WAS RECORDED AT 172F. THE TEMPERATURE LOG WAS REVIEWED AND THE RECORDED, HOURLY TEMPERATURE READINGS WERE WITHIN THE REQUIRED RANGE. THE GAUGES WERE REPAIRED AT THE TIME OF THE INSPECTION.
Recommendation: Ensure that water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit are designed to be accurate to 1.5C in the intended range of use. (2) That are scaled only in Fahrenheit are designed to be accurate to 3F in the intended range of use.

Violation: TWO STORED, PREVIOUSLY CLEANED PLATES WERE FOUND SOILED.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Site: Children Area-CHILDREN'S AREA
Violation: DISPOSABLE WIPES WERE NOT PROVIDED AT THE DIAPER CHANGING TABLE IN THE CHILDREN'S AREA.
Recommendation: Ensure that each toilet facility is provided with a supply of toilet tissue, disposable gloves, and sanitary wipes.
