Site: Potable Water-RECORDS
Violation: AIR-GAPS UTILIZED AS A MEANS OF BACKFLOW PREVENTION WERE NOT LISTED IN THE CROSS-CONNECTION CONTROL PLAN. THIS IS A NEW REQUIREMENT IN THE 2005 VSP OPERATIONS MANUAL.
Recommendation: 5.7.1.1.4 Ensure that the cross-connection control program includes at a minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so there is a match to the plumbing system component and location, the program shall set a schedule for inspection frequency. Repeat devices such as toilets can be grouped under a single device type, and air-gaps shall be included in the listing.

Site: Potable Water-BUNKERING STATIONS
Violation: THE POTABLE WATER HOSES WERE NOT LABELED WITH THE WORDS "POTABLE WATER ONLY" AT THE CONNECTING ENDS. THIS IS A NEW REQUIREMENT IN THE 2005 VSP MANUAL.
Recommendation: Ensure that potable water hoses are labeled for use with the words "potable water only" in letters at least 13mm (0.5 inch) at each connecting end.

Site: Galley-DECK 3 FOOD PREP
Violation: TWO PANS OF SAUTÉED ONIONS WERE PLACED IN THE BLAST CHILLER AT 745 AM. THE TEMPERATURE WAS 139 °F. AT 10 AM THE MEASURED TEMPERATURE WAS 108 ° F. THE PANS WERE TOO DEEP TO PROPERLY COOL THE FOOD TO THE REQUIRED 70 ° F WITHIN 2 HOURS.
Recommendation: Ensure that cooked potentially hazardous food is cooled: (1) Within 2 hours, from 60°C (140°F) to 21°C (70°F); and (2) Within 4 hours, from 21°C (70°F) to 5°C (41°F) or less.

Site: Galley-DECK 3
Violation: THE BUTTER AND MILK LOCATED IN WALK-IN REFRIGERATOR (UNIT NUMBER 3800-4) MEASURED 46 DEGREES F. THESE ITEMS WERE TRANSFERRED TO A BLAST CHILLER. THE AMBIENT AIR TEMPERATURE OF THE WALK-IN REFRIGERATOR WAS MEASURED AT 50 DEGREES F AT 945 AM. THE AMBIENT TEMPERATURE WAS MEASURED AGAIN AT 1030 AM AND WAS MEASURED AT 50 DEGREES F. THIS UNIT WAS NOT CAPABLE OF MAINTAINING PRODUCT TEMPERATURE.
Recommendation: Ensure that equipment for cooling and heating food, and holding cold and hot food, is sufficient in number and capacity to maintain specified potentially hazardous food temperatures.

Site: Galley-DECK 3 PASTRY
Violation: LOOSE SEALANT WAS NOTED ON THE TECHNICAL COMPARTMENT OF THE LARGE KETTLE IN THIS AREA.
Recommendation: Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material. Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: PEELING WAS NOTED ALONG THE EDGES OF THE WAITER TRAYS.
Recommendation: Ensure that nonfood-contact surfaces of equipment and utensils are designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Violation: THE SANITIZING SOLUTION MEASURED 10 PPM IN THE SERVICE AREA.
Recommendation: Ensure that a chlorine solution used as a sanitizing solution has a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).

Violation: TWO PREVIOUSLY CLEANED GLASSES WERE SOILED AND STORED AS CLEAN.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Site: Pantry-DECK 3 LOCKER 3739
Violation: THE HANDWASH SINK WAS FILLED WITH ICE BUCKETS FROM THE CABINS AND WAS INACCESSIBLE FOR CABIN ATTENDANTS TO WASH THEIR HANDS. THE BUCKETS WERE REMOVED AT THE TIME OF THE INSPECTION.
Recommendation: Ensure that handwashing facilities are used for no other purpose and are accessible at all times.

Violation: THE PROFILE STRIP WAS SEPARATED FROM THE BULKHEAD IN THIS AREA, MAKING CLEANING DIFFICULT.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, are maintained in good repair.

Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, are maintained in good repair.

Violation: THE LIGHTS ABOVE THE COUNTER TOP WERE NOT SHIELDED OR SHATTER RESISTANT. THE FACILITIES MANAGER STATED THAT THESE WERE REGULAR LIGHT BULBS.
Recommendation: Ensure that light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles.
