Site: Medical-MEDICAL - HANDWASHING AND PERSONAL HYGIENE INFORMATION
Violation: THE MEDICAL STAFF IS NOT PROVIDING SYMPTOMATIC PASSENGERS WITH A WRITTEN HANDWASHING AND PERSONAL HYGIENE INFORMATION SHEET. THIS IS A NEW REQUIREMENT UNDER THE VSP OPERATIONS MANUAL - 2005.
Recommendation: Ensure that symptomatic passengers meeting the defintion for AGE are provided handwashing tips and personal hygiene information.

Violation: THE ICE MACHINE WAS POSTED OUT OF ORDER FOR THE PAST MONTH. THE SHIP IS AWAITING REPLACEMENT PARTS.
Recommendation: Repair the ice machine.

Site: Galley-MAIN GALLEY - GARDEN SECTION
Violation: THE THERMOSTAT KNOB WAS MISSING FROM THE STEAM TABLE CONTROL PANEL, LEAVING OPENINGS, MAKING IT DIFFICULT TO CLEAN.
Recommendation: Replace missing thermostat knob.

Site: Galley-RAFFLES - GALLEY
Violation: THE DETERGENT DISPENSER ON BOTH THE DISHWASH AND GLASSWASH MACHINES WERE EMPTY. THE MACHINES WERE IN ACTIVE USE AT THE TIME OF THE INSPECTION. THESE ITEMS WERE CORRECTED AT THE TIME OF THE INSPECTION. TWO OF FIVE UPPER WASH SPRAY ARMS WERE NOT FUNCTIONING ON THE DISHWASH. THERE WAS NO WATER COMING THROUGH ANY OF THESE NOZZLES. ONE UPPER FINAL RINSE SPRAY NOZZLE WAS NOT FUNCTIONING PROPERLY. THESE ITEMS WAS CORRECTED DURING THE INSPECTION. BOTH MACHINE REGISTERED ACCPETABLE FINAL RINSE TEMPERATURES.
Recommendation: Ensure that warewashing machines that use a chemical for sanitization and that are installed after adoption of these guidelines are equipped with a device that indicates audibly or visually when more chemical sanitizer needs to be added.

Site: Galley-MAIN GALLEY - DISHWASH AREA (WINDOWS)
Violation: THE GLASSWASH FINAL RINSE TEMPERATURE WAS MEASURED AT 180 F WITH A MAXIMUM REGISTERING THERMOMETER AT THE DISH SURFACE, WHILE THE MOUNTED FINAL RINSE TEMPERATURE GAUGE MEASURED 245 F. THE FINAL RINSE PRESSURE WAS WITHIN ACCEPTABLE LIMITS AND THERE WAS NO EVIDENCE OF STEAM PRODUCTION. THE DISHWASH FINAL RINSE TEMPERATURE WAS MEASURED AT 174 F WITH A MAXIMUM REGISTERING THERMOMETER, WHILE THE MOUNTED FINAL RINSE TEMPERATURE GAUGE MEASURED 230 F. THE FINAL RINSE PRESSURE WAS WITHIN ACCEPTABLE LIMITS AND THERE WAS NO EVIDENCE OF STEAM PRODUCTION. BOTH GAUGES APPEAR TO BE OUT OF CALIBRATION.
Recommendation: Repair or replace the final rinse temperature gauge.

Site: Pantry-BELL BOX PANTRY - DECK 5
Violation: UTENSILS WERE NOTED TO BE VERY TIGHTLY PACKED IN THE PLASTIC RACK, WHILE BEING PUT THROUGH THE SINGLE STAGE WAREWASH MACHINE, PRECLUDING PROPER CLEANING AND SANITIZING.
Recommendation: Ensure that soiled items to be cleaned in a warewashing machine are loaded into racks, trays, or baskets or onto conveyors in a position that: (1) Exposes the items to the unobstructed spray from all cycles; and (2) Allows the items to drain.

Violation: ONE PREVIOUSLY CLEANED PAN WAS FOUND SOILED ON THE HANDLE AND STORED AS CLEAN.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: THE BELT MECHANISM OF THE DOUGH SHEETER WAS SOILED WITH FLOUR. THIS ITEM WAS USED THE PREVIOUS EVENING. THIS ITEM WAS PREVIOUSLY CLEANED.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: WET PLASTIC CUPS WERE NOTED STACKED IN A RACK READY FOR SERVICE.

Violation: THE BULBS AT THE CARVING STATIONS DID NOT APPEAR TO BE SHATTER-RESISTANT. THE BULBS EXTENDED PAST THE PROTECTIVE SHIELDS.
Recommendation: Ensure that light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles. Ensure that an infrared or other heat lamp is protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed.

Violation: THE VINYL COATING ON THE FISH FIGURES WAS WORN IN MANY PLACES, MAKING CLEANING DIFFICULT.
Recommendation: Ensure that surfaces of tables, chairs, and other furnishings that children touch with their hands are cleanable.
