SOME OF THE GENERIC (5.38) INSTRUCTION CONFLICTED WITH THE ACTUAL PLAN MANAGEMENT IN THE ORANGERY, SUCH AS WHEN POTENTIALLY HAZARDOUS FOODS ACTUALLY BEGIN TIME MANAGEMENT AND WHAT STATUS FOODS HELD HOT OR COLD IN THE ORANGERY GALLEY HAVE (TIME CONTROL OR TEMPERATURE). BECAUSE THE SERVICE PERIODS RUN CONSECUTIVELY AND THE OPERATION CAN BE OPEN FOR WELL OVER 4 HOURS, THERE SHOULD BE SPECIFIC REVIEW OF ITEMS SERVED AND CLEAR GUIDANCE ON THE TIME CONTROL FOR THIS OUTLET.

Establish the bacterial control method to be used in all food outlets. When time only as a public health control is selected a plan describing the food outlet, serving periods, and foods involved. Critical points, such as when time control begins should be detailed. If operations extend beyond 4 hours, discard times should be affixed to individual pans of food.
