Site: Potable Water-FAR POINT ANALYZER UPPER LOOP
Violation: A MANUAL COMPARISON WAS CONDUCTED BY THE STAFF AT 7 AM. THE CHART ANALYZER READ 0.9 PPM AND THE MANUAL TEST READ 1.1 PPM. NO CALIBRATION WAS CONDUCTED. DURING THE INSPECTION, A MANUAL TEST BY THE INSPECTOR READ 1.35 PPM, WHILE THE MANUAL TEST BY THE STAFF READ 1.1 PPM. THE CHART ANALYZER FOR THE FREE RESIDUAL CHLORINE READ 0.78 PPM.
Recommendation: Ensure that the free residual halogen measured by the halogen analyzer is 0.2 mg/L (ppm) of the free residual halogen measured by the manual test.

Site: DO NOT USE (whirlpool/spa)-RECORDS
Violation: THE DAILY LOGS DID NOT INDICATE WHEN THE SPA WAS SHOCKED HALOGENATED. HOWEVER, THE DAILY INSTRUCTIONS FOR THE WHIRLPOOLS DID INCLUDE PROCEDURES FOR HALOGENATION.
Recommendation: Ensure that the free residual halogen is increased to at least 10.0 mg/L (ppm) in whirlpool spas and circulated for at least 1 hour at the end of each day. Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Violation: PER STAFF, THE PROCEDURES STATE THAT THE WHIRLPOOLS ARE TO BE DISINFECTED AT THE END OF EACH 14 DAY CRUISE. HOWEVER, THE STAFF STATED THAT THE WHIRLPOOLS ARE DISINFECTED EVERY 7 DAYS. THE RECORDS PRIOR TO AUGUST 2, 2006 INDICATED THAT WHIRLPOOLS WERE ONLY DISINFECTED EVERY 14 DAYS.
Recommendation: Ensure that private whirlpool spas located in individual passenger cabins are cleaned and disinfected, including associated recirculation systems, between occupancies or weekly, whichever is more frequent.

Site: Galley-DECK 3 POT WASH
Violation: THE HOT WATER FOR THE SANITIZING COMPARTMENT MEASURED 189F WITH THE INSPECTORS THERMOMETER WHILE THE SHIPS MOUNTED THERMOMETER MEASURED 180F.
Recommendation: Ensure that water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit are designed to be accurate to 1.5C in the intended range of use. (2) That are scaled only in Fahrenheit are designed to be accurate to 3F in the intended range of use.

Violation: A FEW SOILED PLATES WERE STORED INSIDE THE CLEAN STORAGE CABINET ON THE PORT SIDE BUFFET SERVICE LINE.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: ONE RACK OF CLEAN COFFEE MUGS AND A FEW SMALL PLATES WERE STORED WET AND OUT FOR SERVICE ON THE PORT BUFFET SERVICE LINE.
Recommendation: After cleaning and sanitizing, ensure that equipment and utensils are air-dried or adequately drained before contact with food.

Site: Pantry-DECK 6 FORWARD PANTRY
Violation: SEVERAL PLATES WERE STACKED WET INSIDE THE CLEAN STORAGE CABINET.
Recommendation: Ensure that clean equipment and utensils are stored: (1) In a self-draining position that allows air drying; and (2) Covered or inverted.

Site: Buffet-SEASIDE CAFE
Violation: AN ACCUMULATION OF DUST WAS NOTED IN THE OPENINGS OF THE OVERHEAD LIGHTS ABOVE THE BUFFET SERVICE LINE. THE OPENINGS WERE LOCATED ABOVE THE FOOD ON THE BUFFET SERVICE LINE. DUST WAS NOT NOTED ON THE FOOD CONTACT SURFACES OF THE BUFFET.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Site: Other-DECK 10 POOL GRILL
Violation: THE FLAT GRILL HAS BEEN OUT OF ORDER SINCE THE PREVIOUS INSPECTION ON 1 JULY 2006. THE GRILL IS SEVERELY PITTED, MAKING CLEANING DIFFICULT.
Recommendation: Repair or remove the flat grill.
