Site: Potable Water-CROSS-CONNECTION CONTROL PROGRAM
Violation: THE LISTING OF BACKFLOW PREVENTION DEVICES DID NOT INCLUDE THE CHEMICAL DISPENSERS LOCATED IN GALLEYS AND OTHER SPACES THROUGHOUT THE SHIP WITH INTERNAL PREVENTERS, AND THE BULK SOAP DISPENSERS AT THE DISH AND POT WASH MACHINES THROUGHOUT WHICH HAVE ATMOSPHERIC VACUUM BREAKERS INSTALLED AT THE POTABLE WATER FEED. THERE WAS ALSO NO DOCUMENTED INSPECTIONS OF THESE DEVICES.
Recommendation: Include chemical dispensers and bulk soap dispenser backflow preventers in the formal listing and begin inspection and documentation of the inspections for same.

Site: Recreational Water Facilities-OASIS POOL
Violation: THIS POOL HAS A WATERFALL FEATURE WHICH IS UNDER VSP REVIEW AS A SPA POOL. THE BROMINE RESIDUAL IN THE POOL IS NORMALLY MAINTAINED AT THE POOL REQUIRED LEVELS, AND TODAY MEASURED 2 PPM. A FINAL DECISION IS PENDING, BUT NO CHANGE IN OPERATION, MAINTENANCE, OR HALOGENATION IS REQUIRED AT THIS TIME.
Recommendation: None at this time.

Site: Recreational Water Facilities-SEAVIEW AND LIDO POOLS
Violation: THE WATER DEPTH MARKINGS ON THESE TWO POOLS WERE NOT CLEARLY VISIBLE FROM OUTSIDE THE POOL DUE TO THE SMALL NUMBER AND LETTER SIZES.
Recommendation: Increase the letter and number sizes on depth marking signs, so they are visible from outside the pools.

Site: Other-NEPTUNE LOUNGE - DECK 7
Violation: AN UNPEELED ORANGE IN A BOWL OF MIXED FRUIT ON THE SELF-SERVICE COUNTER WAS SPOILED AND HAD A HOLE IN THE OUTER PEEL. STAFF IMMEDIATELY REMOVED THE ORANGE AND DISCARDED IT.
Recommendation: Ensure damaged or spoiled fruit is never offered for consumption.

Violation: SOLE WAS STORED IN THE WALK-IN REFRIGERATION UNIT AND THE TEMPERATURE WAS MEASURED AT 45.5F. THE FISH HAD BEEN PREPARED EARLIER IN THE DAY. THE SALMON TEMPERATURES WERE TAKEN AND RECORDED AT 37.5F. THE SOLE WAS REMOVED, PLACED IN SHALLOW PANS AND PLACED IN THE BLAST CHILLER.
Recommendation: Except during preparation, cooking, or cooling, or when time is used as the public health control, ensure that potentially hazardous food is maintained: (1) At 60C (140F) [roasts 54C (130F)] or above, or (2) At 5C (41F) or less.

Site: Other-NEPTUNE LOUNGE - DECK 7
Violation: THE MILK IN THE COFFEE MACHINE SIDE REFRIGERATOR PAN HAD A TEMPERATURE OF 44F. STAFF ADJUSTED THE MILK COMPARTMENT TEMPERATURE CONTROL DURING THE INSPECTION.
Recommendation: Ensure that the refrigeration ambient temperature is capable of maintaining cold-holding temperature for milk of at least 41 F or below at all times. Otherwise, there should be some time control option examined for these refrigeration units.

Violation: COOLING LOGS WERE NOT BEING MAINTAINED ONBOARD THE VESSEL FOR THE REQUIRED 30 DAYS. THIS WAS NOTED ON THE LAST INSPECTION.
Recommendation: Ensure that logs documenting cooked, potentially hazardous food cooling temperatures and times from the starting points designated in 7.3.5.2.1 thru the control points at 2 and 6 hours are maintained onboard the vessel for a period of 30 days form the date the food was placed in the cooling process. Ensure that logs documenting cooling of potentially hazardous foods prepared from ingredients at ambient temperatures, with the start time to the time when 5C (41 F) is reached are also maintained for a period of 30 days, beginning with the day of preparation.

Violation: A BOWL FILLED WITH MIXED RAW FRUIT, INCLUDING UNPEELED GREEN AND RED APPLES WAS SET ON A PASSENGER SELF-SERVICE COUNTER WITHOUT A COVER OR PROTECTIVE SHIELD FROM PASSENGER COUGH OR SNEEZE.
Recommendation: Provide effective sneeze shields or covers for fruits which are consumed without removing the peel or skin.

Violation: THE MICROWAVE OVEN WAS POSTED OUT OF ORDER AND HAS BEEN OUT OF ORDER FOR MORE THAN 90 DAYS AWAITING SPARE PARTS.

Recommendation: Repair or replace the refrigerators.

Violation: THE WOODEN CABINET USED TO STORE DRY GOODS WAS WORN AND THERE WAS EXPOSED RAW WOOD.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: THE COATING OF THE CONVECTION OVEN HANDLES WAS PEELING MAKING THE SURFACE DIFFICULT TO CLEAN.
Recommendation: Ensure that non-food contact equipment is maintained in good repair and proper adjustment including: (1) Equipment maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines. (2) Equipment components such as doors, seals, hinges, fasteners, and kick plates are kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Recommendation: Remove peeling sealant and replace as needed.

Recommendation: Ensure that food only contacts surfaces of equipment and utensils that are cleaned and sanitized. Ensure that the food-contact surfaces of cooking equipment and pans are kept free of encrusted grease deposits and other soil accumulations.

Recommendation: After cleaning and sanitizing, ensure that equipment and utensils are air-dried or adequately drained before contact with food.

Violation: THE DECK COATING MATERIAL THROUGHOUT THE MAIN AND CREW GALLEYS AS WELL AS THE PROVISION AREAS WAS PITTED. THE DECK COATING MATERIAL AT SCUPPER, FLOOR-MOUNTED EQUIPMENT, AND COVING INTERFACES WAS PEELING. THESE FEATURES MAKE CLEANING DIFFICULT.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: MISSING AND PEELING SOFT SEALANT WAS NOTED BETWEEN THE DECKHEAD PANELS.

Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.
