Site: Recreational Water Facilities-
Violation: The fecal accident response plan indicated that for loose stools disinfection concentration and contact time was to be 5 ppm for 24 hours which was not sufficient to address Cryptosporidium.
Recommendation: Ensure that the fecal accident response plan meets or exceeds the procedure provided in annex 13.11 of the VSP Manual.

Site: DO NOT USE (whirlpool/spa)-Forward Whirlpool
Violation: From 07/31-08/03/2006 the chart recorder was not working. Several of the manual tests were conducted more than 1 hour apart or the times that the tests were conducted were not indicated on the charts.
Recommendation: Ensure that residual halogen logs are maintained with residuals measured and recorded hourly during operation.

Site: Galley-Garde Manger
Violation: There was dried food debris noted on the previously cleaned Hobart slicer.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: Dried food debris was noted on the sides of the clean glassware racks.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: There were a few small pieces of broken glass noted on the clean plate storage shelf.

Violation: Several of the glasses on the bar counter were not covered or inverted.
Recommendation: Ensure that clean equipment and utensils are stored: (1) In a self-draining position that allows air drying; and (2) Covered or inverted.

Site: Pantry-Ice Pantries General
Violation: Four ice pantries were checked and it was noted that "wash hands often" signs were not posted at the handwash stations. These pantries were near passenger cabins 1103, 1079, 1080, and 8058.
Recommendation: Ensure that a sign stating "WASH HANDS OFTEN" in a language that the food employees understand is posted over handwashing sinks.

Site: Galley-Dishwash
Violation: A " wash hands often" sign was not posted over the handwash station at the soiled end.

Violation: There was loose sealant in the deckheads above the cooking stations, making cleaning difficult.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Site: Galley-Deck 2 Main Galley and Pinnacle Galley Dishwash
Violation: There was condensate forming on the deckhead above the dishwash machine in the dishwash area. The condensate was dripping onto the machine and not onto the clean plates.
Recommendation: Ensure that exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting are designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.

Site: Housekeeping-Public Toilet Room
Violation: Not all of the public toilets were equipped to allow for exit without the use of bare hands. The toilets were supplied with cloth towels or tissues but the disposal containers for these items were too far from the door.
Recommendation: Equip public toilet facilities so that persons exiting the toilet room are not required to handle the door with bare hands. This may be accomplished by methods such as locating paper towel dispensers at sinks and waste containers near the room door, installing mechanically operated doors, door removal, or other effective means.

Site: Children Area-
Violation: Sanitary wipes were not provided in the toilet room. A container of Virox wipes was noted on the sink of the toilet room. This product was labeled "keep out of reach of children". The product was removed from the toilet room. The Virox wipes were noted in numerous toilet rooms. In addition, the wipes were labeled "never use for personal hygiene or for infant wipes". There was no indication on the container or on the material safety data sheet that these wipes were to be used as hand wipes. Per the staff the vessel was just finishing a code yellow cycle and this was why the wipes were noted throughout the vessel.
Recommendation: Ensure that each toilet facility is provided with a supply of toilet tissue, disposable gloves, and sanitary wipes.
