Site: Potable Water-Upper & Lower Loop Far Point
Violation: The two far point halogen analyzers were incorrectly calibrated. The staff was using the high range sample cell to read in the low range setting. This was causing an inaccurate reading. The halogen readings when checked with the inspectors instrument were within the acceptable range.
Recommendation: Ensure the manual comparison test is conducted correctly. Ensure staff is knowledgeable in using calibration equipment.

Site: Potable Water-Cross-Connection Control Program
Violation: The cross-connection control program listed the potable water connections to the hair sinks in the salon with Oras 1/2 inch devices for backflow prevention. The connections were protected by Watts N9 devices.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Recreational Water Facilities-Baby Splash Zone
Violation: Children in diapers who were not toilet trained were permitted in the Baby Splash Zone. A variance has been submitted, but there has been no approval. Guidelines that were approved on other vessels were in place and being followed.
Recommendation: Ensure that children in diapers or who are not toilet trained are not permitted in the public swimming pools and whirlpool spas. Ensure an approved variance and approval letter are available for review.

Site: Housekeeping-Private Cabin Whirlpools
Violation: The whirlpool spas in individual passenger cabins were clean and disinfected once during the 8-day cruises.
Recommendation: Ensure that private whirlpool spas located in individual passenger cabins are cleaned and disinfected, including associated recirculation systems, between occupancies or weekly, whichever is more frequent.

Site: Other-Cafe Promenade
Violation: The time as a public health control plan did not discuss the use of 4-hour discard labels. This area was open for greater than 4 hours. Staff stated that discard labels were used.
Recommendation: Ensure the time as a public health control plan states that 4-hour discard labels will be used.

Site: Other-Sorrento's
Violation: The time control plan for Sorrento's only included the potentially hazardous food items that were prepared in and transported from the galley. It did not include the items that were on the cold top of the preparation counter and pre-made pizzas.
Recommendation: Ensure the time as a public health control plan includes the items that are on the cold top of the preparation counter and pre-made pizzas.

Violation: There were no side shields at the mobile buffet station.

Violation: There were a few cracked overhead light covers above the grills.

Violation: There was peeling sealant at the juncture of the back panel and the floor of the technical compartment under the multi-flow dispenser in the back bar counter.
Recommendation: Remove or replace the peeling sealant.

Site: Food Service General-Dishwash Machines
Violation: The dishwash machines have the "Opti-Rinse" spray heads on the final rinse arm. The spray from these heads is difficult to see from the end of the machine, but can be seen from the side. Prior discussions with the machine manufacturer indicated that machines with these spray heads will have a method to open the door next to the final rinse and have the final rinse operate for a short period to inspect the flow from these spray heads. There was no one onboard who knew how to do the test of these spray heads.
Recommendation: Ensure staff are knowledgeable in testing the final rinse spray heads.

Site: Galley-Deck 4 Potwash
Violation: The surface plate temperature of the potwash machine was measured at 198 F.
Recommendation: In a mechanical operation, ensure that the temperature of the fresh hot water sanitizing rinse as it enters the manifold is not more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F); or (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.

Violation: There were a few soiled items stored as clean.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The electrical cord for the vacuum cleaner was in contact with the clean silverware at the waiter station.
Recommendation: Ensure that cleaned equipment and utensils, laundered linens, and single-service and single-use articles are stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 150 mm (6 inches) above the deck.

Violation: The door hinge on the top of the walk-in cooler was broken.
Recommendation: Replace the door hinge.

Violation: There was a vertical missing profile on the bulkhead at the entrance to the bar near the walk-in refrigeration unit.
Recommendation: Replace the profile on the bulkhead.

Site: Galley-Deck 4 Potwash
Violation: There was an excessive amount of condensate on the deckhead above the potwash machine.
Recommendation: Ensure that ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.

Site: Children Area-Illness Exclusion
Violation: According to the child activity center staff, children were not excluded from the center and did not require medical clearance unless they showed two symptoms of infectious illness. The illness exclusion policy stated that children should be excluded and receive medical clearance if they showed signs and symptoms of infections illness.
Recommendation: Ensure that children with infectious illness are not allowed in the child-activity center without permission of the vessel's medical staff.
