Site: Galley-Time as a Public Health Control Plan
Violation: The vessel is using time as a public health control. The written plan does not clearly state that the milk in the coffee machines and the milk products in carafes, were managed using time control.
Recommendation: Included a statement regarding milk in carafes and milk inside coffee machines as being managed on time in the time control plan.

Violation: There were a few times in the past few months where the first recorded halogen reading was more than 30 minutes after the start of production.
Recommendation: Ensure that free residual halogen monitoring is performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Violation: A backflow prevention device was not installed on the potable water line supplying the balloon filling station. The filling stations had threaded taps for hose connections.

Site: Recreational Water Facilities-Fecal Accident Response Procedure
Violation: The fecal accident response procedure did not match with the fecal accident plan. The plan said a 200 ppm free chlorine residual would be established and recirculated for 76.5 minutes. The work detailed in the response procedure stated that the water was recirculated for 60 minutes with 200 ppm free chlorine residual.
Recommendation: Ensure the fecal accident procedures and the fecal accident plan are consistent.

Site: Potable Water-Production
Violation: Per the first engineer, the backwash for the whirlpool sand filters was an automatic start and shut-off system. The backwash lasted 20 minutes. A visual inspection was done only once per week on each filter to determine if the water was running clean.
Recommendation: Ensure that granular filters are backwashed at least daily. Repeat backwashing, if necessary, until the water viewed through the sight glass or discharge point is clean flowing.

Site: Food Service General-Time As A Public Health Control Plan
Violation: The service times for the Pizzeria and the Lido Beverage Stations were longer than 4 hours. Also, the buffet was open longer than 4 hours during two days of the cruise. Per staff, discard labels were being used to control for the 4 hour time. However, the time as a public health control plan did not state that discard labels were used in these outlets.
Recommendation: Ensure the time plan accurately reflects the operations of these areas.

Violation: The curtains inside the mechanical potwasher were heavily soiled with food debris. The upper rinse nozzles were not spraying water. The piping in the technical compartment of the mechanical conveyor potwasher were soiled. The upper final rinse spray nozzles did not have a proper spray pattern that allowed for full equipment and utensil coverage.
Recommendation: Clean the curtains inside the machine and the piping in the technical spaces below the potwasher. Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.
