Site: Food Service General-Johnny Rockets, Portofino, and Chops
Violation: The time as a public control plan stated "food placed out for service" was on time control. The plan did not specify refrigeration or hot holding units on time control.
Recommendation: Ensure the units used for time control are stated on the time control plan.

Violation: The multi-flow syrup connection fixture for the soda dispenser was on the deck under the soda cabinet.
Recommendation: Ensure that cleaned equipment and utensils, laundered linens, and single-service and single-use articles are stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 150 mm (6 inches) above the deck.

Site: Galley-Warewash
Violation: The final rinse surface plate temperature of the dishwash machine was measured between 150 F and 155 F. The machine was in active use.
Recommendation: In a mechanical operation, ensure that the temperature of the fresh hot water sanitizing rinse as it enters the manifold is not more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F); or (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.

Site: Potable Water-Mineralizer Discharge Line
Violation: The pressure relief valve on the reduced pressure zone backflow prevention device did not have an air gap that was two times the size of the diameter of the relief valve drain.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).

Violation: The ice pantry across from stateroom 2320 had wet paper towels at the handwash station.
Recommendation: Ensure the papertowels are dry.

Site: Recreational Water Facilities-
Violation: There was a formed stool fecal accident in the baby splash zone on 02/14/09. The vessel used a 7.5-8.0 ppm free chlorine residual for 1.5 hours and not the 200 ppm for 1 hour specified in the variance. Additionally, the variance required the baby splash zone to remain closed until a negative coliform test was obtained. There was no record of the water sample collected after the disinfection cycle from the fecal accident to test for coliform. There was a loose stool fecal accident in this facility on 01/30/09. The records showed a free chlorine residual of 100 ppm was circulated for 2.5 hours. There was no record of the water sample collected after the disinfection cycle from the fecal accident to test for coliform.
Recommendation: Ensure that the fecal accident procedures are followed according to the variance.

Site: Recreational Water Facilities-
Violation: Per the variance for the baby splash zone, the vessel was required to have a fecal accident checklist. The only fecal accident procedure on the vessel was the regular flow diagram used for the other recreational water facilities. The flow diagram was not a checklist format and did not match the requirements in the variance. Additionally, all of the Freedom class variances need to be upgraded with the current CT value for loose stools.
Recommendation: Ensure the vessel has a fecal accident checklist. Ensure the current CT value (15300) for loose stools is added to the baby splash zone variance.

Site: DO NOT USE (whirlpool/spa)-
Violation: The letter for the large metal drain covers stated that the covers were installed and designed to conform with ASME/ANSI A112.19.8M. There was no indication that the drain covers were tested.
Recommendation: Ensure the letter states that the drain covers are tested in accordance with ASME/ANSI A112.19.8M standard.

Violation: There was no backflow prevention device on the potable water line to the salad washer.
Recommendation: Ensure that backflow preventers are provided on all fixtures using potable water and which have submerged inlets.

Violation: The lower corner of the bulkhead near the entrance was damaged, causing a gap below the bulkhead panel.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: There were deep cuts along the front edge of the cutting board preparation counter.
Recommendation: Ensure that surfaces such as cutting blocks and boards that are subject to scratching and scoring are resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
