Site: Preparation Room-
Violation: One cutting board was found to be very pitted and scored, making cleaning difficult.
Recommendation: Ensure that surfaces such as cutting blocks and boards that are subject to scratching and scoring are resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: Cotton string was found on the drain screen of the handwash station located in the butcher preparation area.
Recommendation: Ensure that handwashing facilities are used for no other purpose and are accessible at all times.

Violation: Corrosion and water was noted within the lip area of the collar for the counter top mixer.

Recommendation: Replace the bulbs.

Violation: The upper plastic cover in the microwave was loose, making cleaning difficult.
Recommendation: Secure the upper plastic cover.

Violation: The handwash station was blocked by stacked plastic bins. This was corrected during the inspection.
Recommendation: Ensure that handwashing facilities are used for no other purpose and are accessible at all times.

Site: DO NOT USE (whirlpool/spa)-Whirlpool Maintenance Records
Violation: The daily backwashing of the whirlpool spa sand filters was performed daily according to staff, but there was no written or electronic record made of the backwashing.
Recommendation: Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Site: Ventilation-Air-Systems - AC Fan Unit EW 201
Violation: The lower interior panel below the air filters in air-conditioning fan unit EW 201 was soiled with standing water, dirt debris and salt debris.
Recommendation: Ensure that evaporative condensers are inspected at least annually and cleaned as necessary to remove scale and that sediment and cooling coils and condensate pans are cleaned as necessary to remove dirt and organic material.

Violation: A partially full bottle of blue curacao had a small, dead flying insect inside. The bottle was discarded immediately.
Recommendation: Ensure that food is safe and unadulterated.

Violation: The previously cleaned stainless steel martini serving pitchers had the original manufacturer's labels affixed on the bottom.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Site: Food Service General-Pantries - Bar and Cabin Service
Violation: The Manitowoc ice machine's had slot-head screw fasteners installed along the sides of the upper cuber panel and at the panel where the water feed tube connects above the water bath.
Recommendation: Replace the slotted head fasteners with low profile non corroding non slotted fasteners.

Site: Buffet-Lido - Pasta Stations Port and Starboard
Violation: The cloth drape and the sunshield blind at each of the pasta stations were soiled with grease and food residue.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Site: Buffet-Lido - Pasta Stations Port and Starboard
Violation: The electronic paper towel dispensers at the two pasta station handwash sinks were mounted above the adjacent preparation counters, exposing them to contamination during handwashing.
Recommendation: Relocate these two paper towel dispensers close by the handwash sinks but not above preparation counters.

Site: Recreational Water Facilities-Sea Horse Pool
Violation: The water depth signs were not visible from the entry stairs to the pool.
Recommendation: Ensure that the depth of each pool is prominently displayed so that it can be seen from the deck and in the pool. Ensure that depth markers are labeled in feet or meters, or both,. Additionally, ensure that depth markers are installed for every 1 m (3 feet) in change of depth.
