Violation: There was good detail in procedures and verification found generally in all the departments today. Temperature monitoring and adjustment of dishwashing equipment in the Lido by Galley Engineering was exceptional.

Violation: A food service worker was released from isolation and allowed to return to work on 10 February 2007. According to one medical record, this individual was symptomatic on 9 February 2007. However, another statement in the medical record did not list the crew member as symptomatic on 9 February 2007.
Recommendation: Ensure that symptomatic food employees meeting the case definition for AGE are isolated in cabin or designated, restricted area until symptom-free for a minimum of 48 hours.

Violation: One large plastic container of a jerk spice was not labeled inside the undercounter spice storage cabinet.
Recommendation: Ensure that working containers holding food or food ingredients that are removed from their original packages for use on the vessel, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar are identified with the common name of the food.

Violation: Two trays of carved fruit decorations were stored above covered bins of sliced tomatoes and onions in cold store room 11-16. This was corrected during the inspection.
Recommendation: Ensure that ready to eat items are stored above decorative food items. Ensure that food is not stored: (9) Under other sources of contamination from nonfood items.

Violation: Side sneeze guards were not provided on the crew buffet service line.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: The back panel of the flat grill was separated from the bulkhead, creating a gap and making cleaning difficult.

Violation: The two left side, upper arm rinse compartment spray nozzles were clogged on the in-use conveyor dishwashing machine.
Recommendation: Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.

Recommendation: Ensure that a chlorine solution used as a sanitizing solution has a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).

Violation: The technical compartment above the doors of reach-in refrigerator #4811 093 071 had a large ice block over the control knob and associated insulation that was draining onto the top exterior surface. Additionally, there was a heavy accumulation of mold on the same top surface and all the associated cold refrigerant insulation.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The upper technical compartment for the single door reach-in refrigerator #4811.093.308 was heavily soiled with mold residue along all surfaces and the insulation. Water was pooling on the lower surface, directly above the door edge.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.
