Violation: BACKFLOW PREVENTER ON BEVERAGE STATION WAS LEAKING.
Recommendation: 5.7.2.2.1 Backflow prevention devices should be periodically inspected and any failed units shall be replaced.

Violation: TIME LABELS USED ON FOOD IN 'DAY STORES' WALK-IN COOLER WERE DATE LABELED AND NOT TIME LABELED.
Recommendation: 7.3.5.3.7 Refrigerated, ready-to-eat, potentially hazardous food may be held at 7C (45F) up to 24 hours in existing short term holding refrigeration equipment provided: (1) The equipment is designated by a permanent label affixed to it indicating the maximum allowable product temperature is 7C (45F) and the maximum allowable storage time is 24 hours; (2) All containers of potentially hazardous foods placed in the unit must be labeled with a date and time by which food shall be used or discarded; (3) Potentially hazardous foods when placed in the equipment shall be at 5C (41F) or less; and (4) When the equipment is upgraded or replaced, it shall be with equipment that can maintain the potentially hazardous food at 5C (41F) or less.

Violation: THE BLAST CHILLER LOGS DID NOT INDICATE THAT TEMPERATURES WERE CHECKED AFTER TWO HOURS TO ENSURE FOOD TEMPERATURES WERE AT OR BELOW 70F, AND AGAIN AFTER FOUR ADDITIONAL HOURS TO ENSURE IT WAS AT OR BELOW 41F. [THIS WAS A REPEAT ITEM FROM THE PAST INSPECTION.]
Recommendation: Include temperatures after two hours and at the end of six hours and record thes temperatures on the blast chiller logs.

Recommendation: 7.3.3.3.2 Packaged food may not be stored in direct contact with ice or water if the food is subject to the entry of water because of the nature of its packaging, wrapping, or container, or its positioning in the ice or water.

Violation: THERE WERE NUMEROUS VITALITY JUICE MACHINES THAT DID NOT HAVE THE PLASTIC DRIP TRAYS INSTALLED IN THE UPPER TECHNICAL COMPARTMENTS.
Recommendation: Contact the vender to have them retrofit these drip trays to make the units easier to clean. 7.4.2.2.6 Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: THE DATA PLATES OF THE FLIGHT TYPE AND CONVEYOR TYPE DISHWASHING MACHINES DID NOT INCLUDE MAXIMUM BELT AND OR CONVEYOR SPEEDS.
Recommendation: 7.5.2.2.3 A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Recommendation: 7.5.3.2.1 Drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation shall be provided for necessary utensil holding before cleaning and after sanitizing. 7.5.7.3.1 Cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE LIGHT LEVELS UNDER THE GREASE HOODS WAS VERY LOW. THIS WAS MOST LIKELY DUE TO THE LOW WATTAGE BULBS AND THE CLOUDED BULB COVERS.
Recommendation: 7.7.5.1.1 The light intensity shall be at least 220 Lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.
