Violation: THE CHLORINE TEST KIT FOR THE POOLS AND SPAS WAS NOT WORKING ADEQUATELY OR THE WRONG REAGENT WAS BEING USED. TWO MANUAL TEST KITS WERE ORDERED THREE WEEKS AGO. LAST WEEK ONE WAS RECEIVED BUT COULD NOT BE CALIBRATED, SO IT WAS RETURNED.
Recommendation: 6.2.2.2.1 A halogen test kit shall be provided and used. Recommend that a working test kit and a back up kit be obtained and that staff be adequately trained in the use of the equipment.

Violation: THE BLAST CHILLER LOG INDICATED THAT ON 3/30, DICED VEGETABLES WERE PLACED IN THE BLAST CHILLER AT 1:00 PM WITH AN INTERNAL TEMPERATURE OF 182F AND AT 3:00 PM THE TEMPERATURE WAS MEASURED WITH AN INTERNAL TEMPERATURE OF 74F.
Recommendation: 7.3.5.2.1 Cooked potentially hazardous food shall be cooled: (1) Within 2 hours, from 60C (140F) to 21C (70F); and (2) Within 4 hours, from 21C (70F) to 5C (41F) or less. Foods should be cooled to 140 F before beginning this time/temperature process. Ice bath methods with constant stirring are preferred.

Violation: HEAVY ICE BUILDUP WAS NOTED ON A BOX OF RAINBOW TROUT FILLETS STORED UNDER THE CONDENSING UNIT IN THE FROZEN FISH WALK-IN.
Recommendation: 7.3.3.5.2 Food may not be stored: (1) In locker rooms; (2) In toilet rooms; (3) In dressing rooms; (4) In garbage rooms; (5) In mechanical rooms; (6) Under sewer lines that are not continuously sleeve welded; (7) Under leaking water lines, including leaking automatic fire sprinkler heads, or under lines on which water has condensed; (8) Under open stairwells; or (9) Under other sources of contamination from nonfood items such as ice blocks, ice carvings and flowers.

Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Recommendation: 7.4.2.1.2 Nonfood-contact surfaces of equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions. 7.4.2.2.6 Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.
