Violation: THE BACKFLOW PREVENTION DEVICES ON THE HIGH SALINITY DISCHARGE LINES FOR THE EVAPORATORS DID NOT HAVE VENTS TO THE ATMOSPHERE. THE BACKFLOW PREVENTION DEVICES ON THE POTABLE WATER LINES SUPPLYING THE HOOD CLEANING SYSTEMS DID NOT HAVE VENTS TO THE ATMOSPHERE.
Recommendation: Install reduced pressure backflow prevention devices on the high salinity discharge lines of the evaporators. Ensure that all backflow prevention devices used on the vessel have vents to the atmosphere.

Violation: THE POTABLE WATER LINE IN THE DECK 8 FORWARD WHIRLPOOL SPA ROOM WAS NOT STRIPED BLUE.
Recommendation: 5.3.2.1.1 Potable water piping shall be painted light blue or striped with 15 cm (6 inches) light blue bands or a light blue stripe at fittings on each side of partitions, decks, and bulkheads and at intervals not to exceed 5 m (15 feet) in all spaces, except where the decor would be marred by such markings.

Violation: THE FREE CHLORINE RESIDUAL TESTS FOR THE PRODUCED WATER WERE CONDUCTED EVERY 4-HOUR SHIFT. IT WAS NOT CLEAR WHETHER THESE TESTS WERE CONDUCTED EVERY 4 HOURS.
Recommendation: 5.2.1.2.2 Free residual halogen monitoring shall be performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Violation: THE PROCEDURE FOR DISINFECTING THE POTABLE WATER TANKS CALLED FOR SPRAYING AND ROLLING ON THE DISINFECTANT.
Recommendation: 5.3.4.1.4 Disinfection following potential contamination shall be accomplished by increasing free residual halogen to at least 50 mg/L (ppm) throughout the affected area and maintaining this concentration for 4 hours.

Violation: YOGURT IN WALK-IN UNIT 48 WAS TESTED AT 50F. THE THERMOMETER IN THIS UNIT NOTED 58F. THE TEMPERATURE LOG FOR THIS UNIT NOTED AN ACCEPTABLE TEMPERATURE EARLIER IN THE DAY. TWO CONTAINERS OF YOGURT AND ONE CONTAINER OF PASTEURIZED EGG PRODUCT WERE NOTED IN THIS UNIT. ALL OF THE CONTAINERS WERE SEALED. THE FOODS WERE PLACED IN THE BLAST CHILLER.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less.

Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.
