Recommendation: 4.2.1.1.2 If the number of cases changes after submission of the initial report, an updated report shall be submitted no less than 4 hours before the vessel's arrival at the U.S. port.

Violation: CHEDDAR CHEESE FROM THE OMELET STATION WAS COOLED FOR LATER USE. THE TEMPERATURE OF THE CHEESE WAS RECORDED AS 80F PRIOR TO PLACEMENT IN THE BLAST CHILLER. IN ADDITION, SHREDDED MOZZARELLA CHEESE AND SLICED PEPPERONI WERE AT 80F PRIOR TO PLACEMENT IN THE BLAST CHILLER. THESE PRODUCTS HAD BEEN OUT FOR USE IN THE PREPARATION OF PIZZA. THE CHEESE WAS DISCARDED. IT WAS NOT CLEAR FROM THE TIME CONTROL PLANS IF THE CHEDDAR CHEESE WAS ON TIME CONTROL.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less. 7.3.5.3.5 If time only, rather than time in conjunction with temperature, is used as the public health control for a working supply of potentially hazardous food before cooking, or for ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption: (1) The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; (2) The food shall be cooked and served, served if ready-to-eat, or discarded, within 4 hours from the time when the food is removed from temperature control; and (3) The food in unmarked containers or packages or marked to exceed a 4 hour limit shall be discarded.

Violation: MOPS WERE NOT HUNG TO DRY AFTER USE. A BUCKET, MOPS, AND AN ELECTRIC FLOOR CLEANER WERE STORED IN A LOCKER THAT WAS NOT DESIGNATED AS A CLEANING MATERIALS LOCKER.
Recommendation: 7.7.7.1.4 After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. 7.7.7.1.2 Maintenance tools such as mops, brooms, and similar items shall be stored in a designated locker so they do not contaminate food; food-contact surfaces of utensils; and equipment; linens, and single-service and single-use articles.
