Violation: THE TWO ENDS OF THE ISLAND BUFFET WERE NOT SHIELDED FROM PASSENGER CONTAMINATION. TWO STAFF MEMBERS WERE PRESENT TO PREVENT PASSENGERS STANDING AND SERVING OR CONTAMINATING THE BREAKFAST FOODS STORED THERE, BUT AT LEAST ONE PASSENGER WAS OBSERVED SERVING A PLATE FROM ONE SUCH END POSITION.
Recommendation: 7.3.3.6.1 Food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: THE ICE MACHINE'S OPEN CELL SEALANT GASKET BETWEEN THE CUBER AND BIN WAS SATURATED WITH MOISTURE.
Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: THE BACK PANEL OF THE SLICER'S HAD PEELING HARD SEALANT (APPETIZER PANTRY, TOAST STATION AND CREW GALLEY).
Recommendation: 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Violation: THERE WERE TWO UNDER COUNTER AND ONE REACH-IN REFRIGERATION UNITS THAT WERE OUT OF ORDER FOR TWO WEEKS IN THE APPETIZER PANTRY. THE SOUP STATION AREA HAD ONE UNDER COUNTER REFRIGERATION UNIT OUT OF ORDER FOR TWO WEEKS.
Recommendation: 7.4.3.1.1 Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to maintain specified potentially hazardous food temperatures.

Violation: THE TABLE MOUNTED CAN OPENER HAD BEEN REPAIRED WITH A RIVET MAKING THE EQUIPMENT DIFFICULT TO CLEAN.
Recommendation: 7.4.2.2.5 Cutting or piercing parts of can openers shall be readily removable for cleaning and for replacement.

Violation: AT MOST WAITER STATIONS WET WIPING CLOTHS WERE STORED IN WASH, RINSE, AND SANITIZE BUCKETS BETWEEN USES. IN ONE STATION THE WET WIPING CLOTH WAS DRAPED OVER THE BUCKET BETWEEN USES.
Recommendation: 7.3.3.4.4.2 Wiping cloths shall be restricted to the following: (2) Cloths used for wiping food spills shall be dry and used for wiping food spills from tableware and single-service articles or wet and cleaned, stored in a chemical sanitizer, and used for wiping spills from food-contact and nonfood-contact surfaces of equipment.
