Item No.: 1
Site: Other-POTABLE WATER
Violation: POTABLE WATER WAS NOT BUNKERED AT 2.0 PPM. THE LOG INDICATED THAT UNTIL 0930 THE FORWARD BUNKER STATION WAS IN USE AND THERE WERE READINGS BETWEEN 2.1 AND 2.3 PPM. AT THE TIME OF THE INSPECTION THERE WAS NO FLOW FROM THE SAMPLE TAP AT THE FORWARD BUNKER LINE. THERE WAS FLOW AT THE MID SHIP BUNKER LINE BUT THE TEST INDICATED 0.1 PPM. IT WAS THEN DETERMINED THAT THE FORWARD STATION WAS IN USE. THE TEST AT THAT POINT WAS ALSO 0.1 PPM.
Recommendation: Water samples obtained from either a sample cock between the bunkering halogenators and the storage tanks or from tanks into which potable water has been bunkered (including water produced on board from a distillation system) must have a free halogen residual of at least 2 ppm. Ensure that there is coordination between the deck and the engine department when bunkering points are changed.

Site: Other-MAIN GALLEY POT WASH
Violation: THE CLEAN LANDING OF THE POT WASH DID NOT HAVE SUFFICIENT SLOPE TO PROVIDE ADEQUATE DRAINAGE. A MANUAL METHOD UTILIZING A SQUEEGEE WAS USED TO REMOVE POOLED WATER. THE SQUEEGEE WAS STORED ON A SHELF UNDERNEATH THE CLEAN SIDE.
Recommendation: Water supply lines and fixtures must be free from leaks and properly installed. Wastewater from equipment and sinks must be properly drained to prevent pooling or leaking of water on the deck. The squeegee is should be stored away from clean items.

Site: Other-PROVISIONS
Violation: A BOX CONTAINING APPLE CARMEL PIE WAS NOT PROPERLY COVERED EXPOSING IT TO CONTAMINATION.
Recommendation: Food handlers are prohibited from eating, drinking, or smoking in food preparation spaces because hand-to-mouth contact may result in contamination of food or food-handling equipment.

Site: Other-PROVISIONS
Violation: THE ICE CREAM STORAGE UNIT HAD EXCESSIVE ICE BUILD UP ON 8 BOXES OF APPLE CRUMB TARTS. THE PRODUCT WAS ENCASED IN ICE.
Recommendation: During transportation and storage, food shall be kept in covered containers or completely wrapped or packaged so as to be protected from contamination.

Site: Other-LIDO / PANTRIES
Violation: THE COUNTER SPACES WERE THE OMELET INGREDIENTS ARE SET ARE NOT PROTECTED WITH SNEEZE GUARD. THE INDUCTION GRILL IS POSITIONED BEHIND A SNEEZE SHIELD BUT NOT THE INGREDIENTS.
Recommendation: Ensure that all of the omelet station is protected from contamination by passengers with sneeze shields.

Site: Other-DIARRHEA REPORTING
Violation: THE DIARRHEA REPORT WAS NOT CALLED IN 24 HOURS PRIOR TO ARRIVAL. THE REPORT WAS CALLED IN APPROXIMATELY 12 HOURS PRIOR TO ARRIVAL.
Recommendation: Diarrhea logs in the hospital must be accurately maintained, and results must be reported to the Vessel Sanitation Program in accordance with Section III of the "Vessel Sanitation Program Operations Manual", August 1989. The operations manual states that the report shall be sent 24 hours prior to arrival in a U.S. Port.

Violation: ONE APPLE CARMEL PIE WAS OPENED AND PARTIALLY CONSUMED AND A CAN OF COKE WAS BEING DRUNK IN ANOTHER WALK-IN.
Recommendation: Food handlers are prohibited from eating, drinking, or smoking in food preparation spaces because hand-to-mouth contact may result in contamination of food or food-handling equipment. Also eating should only be done in designated breakrooms to ensure proper sanitation on board the vessel to minimize the introduction of pests.

Site: Other-MAIN GALLEY POT WASH
Violation: THERE WERE SEVERAL SOILED PANS ON THE CLEAN SIDE OF THE POT WASH.
Recommendation: To prevent cross-contamination, pots, pans, utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Site: Other-MAIN GALLEY POT WASH
Violation: FOUR BINS OF SOILED CUPS WERE STORED ON THE DECK OF THE DISH WASH AREA.
Recommendation: Sufficient storage space for clean and dirty pots, pans, and dishes must be provided to avoid contamination of cleaned equipment.

Violation: COULD NOT VERIFY THAT THE LIGHT BULBS IN THE ALTOSHAAM BAIN MARIES WERE SHATTER PROOF.
Recommendation: Light shields shall be provided for lights where food and equipment are exposed.

Site: Other-MAIN GALLEY PASTRY AND SALAD WALK-INS
Violation: WATER WAS COLLECTED IN THE LIGHT SHIELDS.
Recommendation: Drain water from light shields and ensure that the seal around the fixture is in tact.
