Violation: A PLATTER OF COLD CUTS ON THE BUFFET WAS DISPLAYED IN SUCH A MANNER THAT MADE THE PRODUCT TEMPERATURE 52 - 61 F. REMAINING PRODUCT WAS REMOVED.
Recommendation: Potentially hazardous foods must be maintained at or below 45F (7C).

Recommendation: Unless sufficient space is provided for easy cleaning between, behind and above each unit of fixed equipment, the space between it and adjoining equipment and adjacent bulkheads or deckheads shall be not more than 1/32-inch. If exposed to seepage, the equipment shall be sealed to the adjoining equipment or adjacent bulkheads or deckheads.

Recommendation: Refrigerator gaskets shall be easily cleanable without breaks in the material. The corners shall be closed and sealed and hollow sections shall be sealed.

Violation: A PROFILE STRIP WAS RAISED TO POINT AN OPEN SEAM WAS CREATED ON RIGHT SIDE OF TILTING SKILLET SUPPORT.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Recommendation: All automatic dishwashing machines shall operate at a minimum wash water temperature of according to the manufacturer's data plate.

Violation: HANDLES ON SEVERAL LARGE STIR PADDLES IN CLEAN UTENSIL STORAGE AREA HAD A GREASE FILM ON THEM.
Recommendation: Utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

A food surface is that surface of equipment or utensil with which food normally comes in contact and those surfaces from which food may drip, drain, or splash back onto other surfaces normally in contact with food.

Recommendation: Shielding to protect against broken glass falling into food shall be provided for all artificial lighting fixtures located over, by, or within food storage, preparation, service, display facilities and facilities where utensils and equipment are cleaned and stored.

Violation: HEAVY CONDENSATE WAS DRIPPING FROM DECKHEADS FROM THE EXCESSIVE STEAM BEING GENERATED BY THE COMBI OVENS AND POSSIBLY THE OTHER OPEN BOILING KETTLES AND SKILLETS IN THE AREA.
Recommendation: All food preparation areas shall have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, and fumes. Reduce heat to kettles and other cooking devices to minimum necessary to cook or hot hold.
