Site: Other-PROVISIONS - MEAT FREEZER
Violation: PLASTIC BINS CONTAINING FOOD WERE STORED DIRECTLY ON THE DECK OF THE FREEZER.
Recommendation: 7.3.3.5.1 Food shall be protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE CORNELIUS ICE MACHINES HAD AN ABSORBENT GASKET BETWEEN THE ICE MAKER AND THE BIN.
Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: THE FINAL RINSE PRESSURE AND TEMPERATURES GAUGES WERE NOT OPERATING PROPERLY.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Violation: DATA PLATES WERE NOT AFFIXED TO SOME OF THE WAREWASH MACHINES. THE DATA PLATES HAVE BEEN ORDERED.
Recommendation: 7.5.2.2.3 A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Recommendation: 7.3.4.2.1 Before service in ready-to-eat form, raw, raw-marinated, partially cooked, or marinated-partially cooked fish other than molluscan shellfish: (1) Shall be frozen throughout to a temperature of -20C (-4F) or below for 168 hours (7 days) in a freezer; or -35C (-31F) or below for 15 hours in a blast freezer.

Recommendation: 10.1.1.1.2 Each station shall include: (1) A changing table that is impervious, nonabsorbent, nontoxic, smooth, durable, and cleanable, and designed for diaper changing; (2) A supply of disposable diapers, gloves, wipes, table cleanser, and disinfectant; (3) An airtight, soiled-diaper receptacle; and (4) An adjacent handwashing station.

Recommendation: 5.2.1.2.2 Free residual halogen monitoring shall be performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Violation: THERE WAS NO RECORD PRESENT TO VERIFY THAT THE HALOGEN ANALYZER WAS CALIBRATED ON A DAILY BASIS.
Recommendation: 5.5.1.2.1 The halogen analyzer-chart recorder shall be properly maintained, operated, and calibrated daily in accordance with the manufacturer's instructions. 5.5.1.2.2 The calibration shall be recorded on the chart or in a log book.

Violation: A MINIMUM OF FOUR POTABLE WATER SAMPLES PER MONTH WERE NOT BEING COLLECTED AND ANALYZED FOR THE PRESENCE OF ESCHERICHIA COLI.
Recommendation: 5.6.1.1.1 A minimum of four potable water samples per month shall be collected and analyzed for the presence of Escherichia coli. Samples shall be collected randomly from locations forward, aft, upper, and lower decks of the vessel.

Violation: THE VESSEL DID NOT HAVE A COMPREHENSIVE CROSS-CONNECTION CONTROL PROGRAM.
Recommendation: 5.7.1.1.3 The vessel shall provide a comprehensive cross- connection control program that provides safe connections to the potable water system through air gaps or appropriate backflow devices at the following locations, if present: (1) Potable water supply lines to swimming pools, whirlpool spas, hot tubs, bathtubs, showers, and similar facilities; (2) Photographic laboratory developing machines and utility sinks; (3) Beauty and barber shop spray-rinse hoses; (4) Potable water faucets where hoses are connected or can be connected by threaded or quick-connect outlets such as those serving tanks containing chlorine and other chemicals, and deck taps; (5) Garbage grinders and pulpers; (6) Mechanical warewashing machines; (7) Hospital and laundry equipment; (8) Air conditioning expansion tanks; (9) Boiler feed water tanks; (10) Fire systems; (11) Toilets; (12) Potable water, bilge, and sanitary pumps that require priming; (13) Freshwater or saltwater ballast systems; (14) Bilge or other waste water locations; (15) International shore connection; and (16) Any other connection between potable and non-potable water systems. 5.7.2.2.2 Backflow prevention devices requiring testing, for example reduced pressure backflow preventer and double check valves with test cocks, shall be inspected and tested with a test kit at least annually. Test results showing the pressure differences on both sides of the valves shall be maintained for each device.

Violation: THERE WAS NO RECORD TO INDICATE THE FREE RESIDUAL HALOGEN WAS INCREASED TO AT LEAST 10 PPM AND CIRCULATED FOR AT LEAST 1 HOUR AT THE END OF EACH DAY.
Recommendation: 6.3.2.1.1 The free residual halogen shall be increased to at least 10.0 mg/L (ppm) in whirlpool spas and circulated for at least 1 hour at the end of each day.

Recommendation: 6.4.1.2.2 Anti-vortex drain covers shall be provided on swimming pools and whirlpool spas.

Violation: ENSURE THAT ALL THE POOLS HAVE A SHEPHERD'S HOOK PLUS AN APPROVED FLOTATION DEVICE WITH AN ATTACHED LENGTH OF ROPE THAT IS 1 AND 1/2 THE WIDTH OF THE POOL.
Recommendation: 6.4.1.2.1 Easy access shepherd's hook and approved floatation device shall be provided at a prominent location near each public swimming pool.

Violation: A SEPARATE INVENTORY OF THE DAILY TOTAL, BY QUANTITY AND TYPE OF ANTIDIARRHEAL MEDICATIONS SOLD OF DISPENSED TO THE PASSENGERS AND CREW WAS NOT AVAILABLE FOR INSPECTION.
Recommendation: 4.1.2.1.5 A separate inventory of the daily total, by quantity and type, of antidiarrheal medications sold or dispensed to the passengers or crew members in all areas of the vessel shall be maintained alongside the gastrointestinal illness surveillance log.

Violation: A BOWL OF SHRIMP BEAN SALAD WAS FOUND ON DISPLAY WITH AN INTERNAL PRODUCT TEMPERATURE OF 51 DEGREES F. THE BUFFET LINE WAS TO OPEN IN 10 MINUTES. BACK-UP SHRIMP BEAN SALAD WAS MAINTAINED AT 38 DEGREES F.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less.
