Site: Other-POTABLE WATER
Violation: IT WAS DIFFICULT TO DETERMINE IF THE FOUR MONTHLY E. COLI TESTS WERE PERFORMED IN FEBRUARY 2003. THE TESTS WERE DATED JANUARY, BUT THE ACTUAL LOG WAS DATED FEBRUARY.
Recommendation: 5.6.1.1.1 A minimum of four potable water samples per month shall be collected and analyzed for the presence of Escherichia coli. Samples shall be collected randomly from locations forward, aft, upper, and lower decks of the vessel. Provide better documentation.

Violation: SOME OF THE MICROBIOLOGICAL REPORTS FOR BUNKERED WATER FROM SOME PORTS WERE AS OLD AS 2002. THE SHIP HAS THE CAPABILITY TO PERFORM E. COLI TESTS ON BOARD AND IT WAS SUGGESTED ON THE LAST INSPECTION THAT THE SHIP BEGIN PERFORMING THESE TESTS, INSTEAD OF RELYING ON REPORTS FROM THE PORTS.
Recommendation: 5.1.1.2.1 Where available, the vessel shall have a copy of the most recent microbiologic report from each port before bunkering potable water to verify that the water meets potable standards.

Violation: IT WAS DIFFICULT TO DETERMINE HOW MUCH TIME ELAPSED BETWEEN TESTS FOR POTABLE WATER PRODUCTION. THE TEST RESULTS WERE RECORDED IN THE LOG BOOK UNDER THE WATCH TIMES (00:00-04:00; 04:00-08:00; ETC.) AND THE ACTUAL TIME THE TEST WAS TAKEN WAS NOT RECORDED.
Recommendation: Provide more accurate times when taking water tests. 5.2.1.2.2 Free residual halogen monitoring shall be performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Violation: THE HARD SEALANT ON THE BACKPLATE OF THE MEAT SLICER IN THE BUFFET PANTRY WAS STARTING TO CHIP IN SOME AREAS.
Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. Replace chipping sealant.

Violation: THE FINAL RINSE GAUGE ON THE POTWASH MACHINE WAS READING 30 PSI. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: 7.5.2.1.2 Pressure measuring devices that display the pressures in the water supply line for the fresh hot water sanitizing rinse shall have increments of 7 kilopascals (1 pounds per square inch) or smaller and shall be accurate to 14 kilopascals ( 2 pounds per square inch) in the 100-170 kilopascals (15-25 pounds per square inch) range.
