Violation: THE WRITTEN COMMENT ON THE POTABLE WATER TANK CLEANING INDICATES THE CLEANING AND DISINFECTION WITH TIMES AND CHLORINE CONCENTRATION, BUT THERE WAS NO STATEMENT THAT THE TANKS WERE FLUSHED FOLLOWING SUPERCHLORINATION AND RETURNED TO A FREE CHLORINE CONCENTRATION OF 5 PPM OR BELOW.
Recommendation: 5.3.4.1.6 The disinfected parts of the system shall be flushed with potable water until the free residual halogen is 5.00 mg/L (ppm). 5.3.4.1.3 Documentation of the cleaning shall be maintained for 12 months and shall be available to the VSP for review during inspections.

Violation: THE 5 BOWLS FILLED WITH DRY BREAKFAST CEREAL WERE NOT SHIELDED FROM PASSENGERS STANDING AT THE BOWL STATION AT THE END OF THE BUFFET LINE. ADDITIONALLY, THE CEREAL BOWLS WERE POSITIONED TOO FAR BACK IN THE COLD WELL. THE SERVING SPOON FOR THE BOWL OF FRUIT LOOPS WAS RESTING WITH THE HANDLE ON THE CEREAL.
Recommendation: A small removable shield should be installed at the bowl end of the buffet line. Open bowls of cereal should be formed in a single row and moved near to the front part of the cold well for easy reach and protection from contamination.

Violation: THE DUSTY DECORATION ITEMS ON THE BUFFET TOP THROUGHOUT THE OPERATING BUFFET EXPOSED FOODS IN THE CASE BELOW TO CONTAMINATION. THIS WAS MORE LIKELY OVER THE BOWLS OF DRY BREAKFAST CEREAL.
Recommendation: 7.3.3.5.1 Food shall be protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE ALTO-SHAAM BAIN MARIE'S THROUGHOUT THE LIDO HAD PEELING CONTROL PANEL LABELS WHICH MADE CLEANING THE LOWER PANEL DIFFICULT. ADDITIONALLY, THE CONTROL PANEL LABELS ON THE GARLAND PORTABLE INDUCTION COOK TOPS WERE ALSO PEELING, MAKING THE FRONT PANEL DIFFICULT TO CLEAN.
Recommendation: Replace the control panel labels or seek assistance from the manufacturer on a permanent label which is durable under normal use conditions.

Violation: THE IN-USE HOT WATER SANITIZING SINK HAD A WATER TEMPERATURE OF 170 F AS REGISTERED ON THE SINK THERMOMETER AND 168 F ON THE INSPECTORS MANUAL THERMOMETER (RESTING IN THE WATER AT THE SINK BOTTOM). THE WATER TEMPERATURE WAS ADJUSTED DURING THE INSPECTION. A SIGN WAS POSTED AT THE SINK STATING THAT THE WATER TEMPERATURE REQUIREMENT WAS 171 F.
Recommendation: 7.5.6.1.1 In a manual operation, if immersion in hot water is used for sanitizing: (1) The temperature of the water shall be maintained at 77C, (171F) or above; and (2) The food-contact surface shall be immersed for at least 30 seconds.

Violation: THE ROOM USED FOR DISHWASH INSPECTION HAD NUMEROUS TRAYS OF PREVIOUSLY CLEANED DISHWARE WHICH WERE AIR-DRY. MANAGEMENT STATED THAT THESE ITEMS WERE TO BE RE-WASHED AND INSPECTED PRIOR TO WRAPPING AND STORING FOR SERVICE. THERE WAS A SCHEDULE FOR THE INSPECTION TEAM, BUT NO WRITTEN PROCEDURE DETAILING THIS PROCESS. UPON INSPECTION, SOME OF THE UTENSILS WERE FOUND SOILED WITH FOOD RESIDUE. ONE FULL BIN OF CLOTH WRAPPED UTENSILS WAS INSPECTED FROM THE DINING ROOM WAITER STATION (APPROXIMATELY 120-150 UTENSILS) WITH 2 PIECES FOUND SOILED WITH FOOD RESIDUE.
Recommendation: A detailed written procedure should be developed and submitted to the Vessel Sanitation Program for review to ensure that all are aware of the system of cleaning and inspection in place.
