Violation: A STACK OF PREVIOUSLY CLEANED SHEET PANS WERE FOUND SOILED WITH GREASE AND FOOD RESIDUE AND STORED AS CLEAN UNDER THE CLEAN LANDING OF THE POTWASHING MACHINE.
Recommendation: 7.5.5.1.1 Food-contact surfaces of equipment and utensils shall be clean to sight and touch.

Violation: SLOTTED SCREWS WERE NOTED IN THE SPLASH CONTACT SURFACES OF THE DEEP FRYERS LOCATED THROUGHOUT ALL FOOD PREPARATION AREAS.
Recommendation: Replace the slotted screws with non-slotted fasteners.

Violation: THE ACTUATING LEVER FOR ALL ICE DISPENSING UNITS ARE CONSTRUCTED SO THAT THEY WOULD COME INTO CONTACT WITH THE LIP-CONTACT SURFACE OF GLASSES OR CUPS THAT ARE REFILLED. MOST PUBLIC AREAS HAD A SIGN STATING THAT REFILLING OF CUPS OR GLASSES IS NOT PERMITTED. THERE WAS NO SUCH SIGN ON THE CREW MESS UNIT.
Recommendation: Install properly designed actuating devices that prevent contamination from the lip contact surfaces of glasses and cups. Ensure that a sign is posted in the crew areas stating not to reuse drinking glasses.

Violation: SOILED UTENSILS WERE BEING STORED ON THE LEDGE BETWEEN THE WASH, RINSE AND SANITIZING SINKS, AND THE BULKHEAD.
Recommendation: 7.5.3.2.1 Drain boards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation shall be provided for necessary utensil holding before cleaning and after sanitizing.

Violation: THE HOT MITTS FOR THE BAKERY OVENS WERE FOUND STORED ON THE SOILED DISH RACK LOCATED IN THE POTWASH ADJACENT TO THE OVENS.
Recommendation: Store the hot mitts where they will not be soiled by soiled pots and pans.

Violation: ONE ICE SCOOP WAS FOUND BURIED IN THE ICE IN ICE MACHINE 5.5.
Recommendation: Ensure that the ice scoops are stored to prevent the handles from coming in contact with ice.

Violation: ONE DENTED CAN OF BEANS WAS FOUND IN THE GALLEY DRY STORES. THE DENT WAS LOCATED ALONG THE TOP SEAM OF THE CAN.
Recommendation: 7.3.2.2.5 Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Canned goods with dents on end or side seams may not be used.

Violation: THREE PLASTIC BINS OF INDIVIDUALLY PACKAGED SALAD DRESSING AND CREAM CHEESE WERE FOUND WITH INTERNAL PRODUCT TEMPERATURES OF 50 DEGREES. ALL OF THE PRODUCTS WERE LABELED "KEEP REFRIGERATED".
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less.

Violation: LIGHTING FIXTURES LOCATED DIRECTLY OVER THE BAR WERE NOT SHIELDED NOR SHATTER RESISTANT.
Recommendation: 7.7.5.2.1 Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service, and single-use articles.
