THERE WAS NO INDICATION IN THE RECORDS THAT THE CREW MEMBER WAS CLEARED TO RETURN TO WORK IN WRITING. THE MEDICAL RECORDS INDICATED THAT THE DIARRHEA HAD SUBSIDED AND THAT THE PATIENT WAS NOW EXPERIENCING WEAKNESS. DURING THIS SUBSEQUENT DIAGNOSIS THE PATIENT WAS STILL CONFINED.

Ensure that crew members are cleared to return to work in writing after a diagnosis of gastrointestinal illness has been made.

THE BLAST CHILLER LOG NOTED COOKED PASTA PLACED IN THE BLAST CHILLER THE DAY OF THE INSPECTION. THE PASTA WAS NO LONGER IN THE UNIT AND THE LOG DID NOT INDICATE THE TIME AND THE TEMPERATURE OF THE PASTA WHEN IT WAS REMOVED. IN ADDITION, PART OF THE COOLING OF THE PASTA WAS PRIOR TO PLACEMENT IN THE BLAST CHILLER. IT WAS NOT CLEAR THAT THIS PART OF THE COOLING PROCESS WAS MONITORED. AS PER THE CHEF THE FIRST PART OF THE COOLING PROCESS WAS IN AN ICE BATH.

Ensure that the cooling process is properly monitored.

PANS OF HASH BROWNS WERE TESTED AT 107.3°F IN THE ALTO SHAAM OVEN. THE HASH BROWNS WERE GRILLED APPROXIMATELY 1.5 HOURS PRIOR TO THE TEMPERATURE BEING TESTED. AS PER THE TIME CONTROL PLAN THE BACK-UP FOOD SHOULD BE AT 140°F. THE STAFF ALSO INDICATED THAT THE HASH BROWNS ARE NOT RESERVED AFTER BREAKFAST IS OVER.
