Site: Other-RECORD KEEPING
Violation: THE RECORD KEEPING FOR THE POTABLE WATER TREATMENT, SWIMMING POOLS AND WHIRLPOOL SPAS, BACKFLOW PROTECTION, VENTILATION, AND INTEGRATED PEST MANAGEMENT (IPM) WAS EXCELLENT.

Violation: PERSONS WHO WERE ISSUED ISSUED ANTIDIARRHEAL MEDICATIONS BUT DID NOT MEET THE DEFINITION OF A GASTROINTESTINAL ILLNESS CASE WERE NOT LISTED ON THE GASTROINTESTINAL ILLNESS SURVEILLANCE LOG.
Recommendation: 4.1.2.1.3 The log shall list: (1) All reportable cases of gastrointestinal illness; (2) All passengers and crew members who are dispensed antidiarrheal medication from the master of the vessel, the medical staff, or other designated staff.

Site: Other-PROVISIONS - BUTCHER SHOP
Violation: THREE LARGE PLASTIC BINS FILLED WITH GROUND BEEF PATTIES WERE STORED ON A SHELF DIRECTLY ABOVE OTHER BEEF IN WHOLE AND CUT PORTIONS IN THE WALK-IN REFRIGERATOR. THE CONTAINERS WERE RE-ARRANGED DURING THE INSPECTION.
Recommendation: If different raw meats cannot be stored separately, arrange same rack storage by required internal cooking temperatures, with those meats requiring the higher temperature stored below lower temperature meats.

Site: Other-PROVISIONS CORRIDOR
Violation: THROUGHOUT THE CORRIDORS IN PROVISIONS THERE WERE PALLETS FILLED WITH FOOD PRODUCTS. A BOX OF PUMPKIN SEEDS WAS SEVERELY DAMAGED, TAPED OVER, AND HAD SOME SEEDS FALLING FROM THE SIDE. ANOTHER BOX OF FLOUR WAS SEVERELY DAMAGED ON A CORNER SECTION WITH POWDER RESIDUE EVIDENT OUTSIDE OF THE CONTAINER. THE PALLET ON WHICH THE BOXES SET HAD BROKEN WOOD PIECES BESIDE, INDICATING THERE WAS PHYSICAL DAMAGE TO IT AND SOME OF THOSE FOOD CONTAINERS.
Recommendation: Some serious planning and sorting is needed to ensure there is adequate space for storage of foods. When conditions of excess storage occur there should be specific selection of the most durable food containers and products for any corridor temporary storage, and the pallets should be positioned in ways to allow transport and other activities so the food products are not subject to damage and contamination. When such damage occurs there should be immediate inspection and discard of products with evidence of contamination.

Site: Other-MAIN GALLEY DECK 5 - POT WASH
Violation: STAFF AT THE CHEMICAL SANITIZING SINK OF THE POTWASH WERE OBSERVED DIPPING POTS FOR ONLY 5 SECONDS PRIOR TO PLACEMENT ON THE CLEAN STORAGE RACK.
Recommendation: 7.5.6.2.2 A chemical sanitizer shall be used in accordance with the EPA-approved manufacturer's label use instructions at a minimum temperature of 24°C (75°F) with an exposure time of 7 seconds for a chlorine solution and 30 seconds for other chemical sanitizers.
