LARGE PLASTIC CONTAINERS OF POTENTIALLY HAZARDOUS FOODS WERE NOTED SETTING ON A COUNTER AT ROOM TEMPERATURE. SMALLER SERVING CONTAINERS WERE BEING FILLED FROM THESE LARGE CONTAINERS AND PLACED ON THE BUFFETS. THE CONTAINERS WERE NOT LABELED WITH A DISCARD TIME FOUR HOURS AFTER BEING REMOVED FROM TEMPERATURE CONTROL.
THE VESSEL IS USING TIME AS A PUBLIC HEALTH CONTROL FOR THESE FOODS AND THE SERVICE TIME FOR MEALS DOES NOT EXCEED FOUR HOURS AS OUTLINED IN THEIR TIME AS A CONTROL PLAN. HOWEVER SEVERAL OF THE ITEMS EACH DAY ARE SERVED AT BOTH LUNCH AND DINNER SO IT IS POSSIBLE THAT A CONTAINER COULD BE FORGOTTEN AND THE TIME COULD EXCEED FOUR HOURS.

If time only, rather than time in conjunction with temperature, is used as the public health control for a working supply of potentially hazardous food before cooking, or for ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption:
(1) The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; (2) The food shall be cooked and served, served if ready-to-eat, or discarded, within 4 hours from the time when the food is removed from temperature control; and (3) The food in unmarked containers or packages or marked to exceed a 4 hour limit shall be discarded.
Time mark the containers of ready to eat foods that are served during both lunch and dinner service times.
