Violation: THERE WERE SEVERAL DAYS SINCE THE LAST INSPECTION WHEN THE DISTRIBUTION SYSTEM HALOGEN ANALYZER CHART RECORDER CHARTS WERE NOT CHANGED DAILY.
Recommendation: 5.5.2.2.1 Halogen analyzer-chart recorder charts shall be changed, initialed, and dated daily. Charts shall contain notations of any unusual water events in the potable water system.

Violation: CORE SAMPLES WERE NOT USED FOR THE MONTHLY SEDIMENTATION TESTS.
Recommendation: 6.3.1.1.5 The granular filters shall be opened at least monthly and examined for cracks, mounds, or holes in the filter media. A core sample of the filter media shall be inspected for excessive organic material accumulation using a recommended sedimentation method.

Violation: DURING THE EVALUATION OF CLEAN DISHWARE, IT WAS NOTED THAT SOME DISHES STACKED ON THE CLEAN DRAINBOARD WERE COLD. WHEN GALLEY PERSONNEL WERE ASKED WHY THE DISHES WERE COLD, IT WAS STATED THAT THEY WERE STORED IN A REFRIGERATOR AND RETURNED TO THE DISHWASH AREA FOR CLEANING. IT COULD NOT BE DETERMINED WHETHER THE DISHES WERE SOILED, ALTHOUGH THEY WERE TREATED AS IF THEY WERE SOILED, SINCE THEY WERE RETURNED TO BE CLEANED.
Recommendation: Train galley personnel to stack all dishes returned to the dishwash area for cleaning on the soiled side of the dishwash operations rather than on the clean side to minimize the possibility of cross-contamination.

Violation: POTENTIALLY HAZARDOUS READY-TO-EAT FOODS PREPARED ONBOARD AND HELD REFRIGERATED FOR GREATER THAN 24-HOURS, WERE MARKED WITH THE PREPARATION/OPENING DATE INSTEAD OF THE DATE IS WAS TO BE CONSUMED.
Recommendation: None: 7.3.5.3.1 Refrigerated, ready-to-eat, potentially hazardous food: (1) Prepared on a vessel and held refrigerated for more than 24 hours shall be clearly marked at the time of preparation to indicate the date by which the food shall be consumed, which is, including the day of preparation, 7 calendar days or fewer from the day the food is prepared.

Violation: TWO CONTAINERS OF PASTA WERE PLACED IN THE BLAST CHILLER ON THE DAY OF THE INSPECTION AT 9:45 AM WITH INTERNAL TEMPERATURES OF 110F AND 115F RESPECTIVELY. THERE WAS NO INDICATION THAT THE COOLING PROCESS WAS MONITORED BETWEEN 140F AND THE TEMPERATURES LISTED ABOVE.
Recommendation: 7.3.5.2.1 Cooked potentially hazardous food shall be cooled: (1) Within 2 hours, from 60C (140F) to 21C (70F); and (2) Within 4 hours, from 21C (70F) to 5C (41F) or less.

Violation: A MARTINI GLASS CONTAINING A DRINK WAS NOTED IN AN UNDERCOUNTER REFRIGERATOR. IT WAS STATED THAT A CUSTOMER ORDERED THE DRINK, DRANK SOME OF IT, AND LEFT TO EAT. INSTEAD OF DISCARDING THE DRINK, THE BARTENDER PLACED IT IN THE REFRIGERATOR FOR LATER USE BY THE CUSTOMER.
Recommendation: Discontinue the practice of storing partially consumed drinks in refrigeration units to prevent potential contamination of other food/drink items.

Violation: A GLUE-LIKE RESIDUE WAS NOTED ON THE PLASTIC PANEL IN THE UPPER COMPARTMENT OF THE ICE MACHINE, MAKING THE AREA DIFFICULT TO CLEAN. THIS MATERIAL APPEARS TO BE THE GLUE ASSOCIATED WITH LABELS THAT WERE REMOVED AFTER THE PREVIOUS INSPECTION.
Recommendation: 7.4.1.1.9 Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
