Violation:
The upper and lower loop water distribution analyzers were not in calibration with the actual free halogen test readings. They varied from 0.8-1.0 parts per million of the test readings. Also, the ship test kit measured free halogen residual in 0.5 ppm increments above 1.0 ppm and in 1.0 ppm increments above 2.0 ppm.

Recommendation:
The analyzer and chart recorder must be properly maintained, operated and calibrated in accordance with the manufacturer's instructions. The free halogen residual measured by the analyzer must compare within 0.2 ppm of the actual halogen level.

Potentially hazardous food prepared in advance shall be stored at a depth which promotes rapid cooling. Preferably, the sandwiches shall be rapidly cooled to 40oF.
