Site: Other-PROVISIONS - BUFFET PANTRY
Violation: THERE WAS A LEAK FROM THE STEAM VALVE FLANGE TO THE STEAM KETTLE CAUSING PUDDLING ON THE DECK.
Recommendation: Water supply lines and fixtures must be free from leaks and properly installed. Wastewater from equipment and sinks must be properly drained to prevent pooling or leaking of water on the deck.

Violation: THERE WAS A CONTAINER OF COOKED GROUND BEEF STORED IN AN UNDERCOUNTER REFRIGERATOR WITH AN INTERNAL PRODUCT TEMPERATURE OF 57 F.
Recommendation: Potentially hazardous food requiring refrigeration should be stored at or below 45oF.

Violation: THE WALK-IN REFRIGERATORS AND FREEZERS HAD DISH TRAYS AND MILK CARTONS USED AS STORAGE PALLETS.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Violation: THE DRAIN LINE FROM THE AUTOMATIC COFFEE MACHINE RUNS ALONG THE BOTTOM INSIDE OF THE CABINET WITHOUT ROOM TO CLEAN UNDERNEATH IT.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition. Recommend that the drain line penetrate the bottom of the cabinet and drain directly in the deck drain.

Violation: THE RUBBER CURTAINS IN THE AUTOMATIC DISHWASHER WERE IN POOR REPAIR.
Recommendation: Dishes and utensils must be cleaned and sanitized utilizing spray-type dishwashing machines. These machines shall be properly installed and maintained in good repair. Machines shall be operated in accordance with manufacturers' instructions, and utensils and equipment placed in the machine shall be exposed to all dishwashing cycles. All automatic detergent dispensers, wetting agent dispensers, and liquid sanitizer injectors shall be properly installed and maintained.

Violation: ONE OF THE POT WASHERS WAS NOTED WIPING CLEAN POTS AND PANS WITH A WIPING CLOTH.
Recommendation: All washed utensils shall be allowed to drain and air dry without the use of drying cloths. Pots and other containers must be put in a self-draining position to permit air drying.

Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Recommendation: To prevent cross-contamination, pots, pans, utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Violation: DISHES (PLATES) WERE STORED IN DISH TROLLEYS WITH THE FOOD CONTACT SURFACES UP AND UNPROTECTED.
Recommendation: After sanitizing, all equipment and utensils shall be air dried. Cleaned and sanitized equipment and utensils shall be handled and stored in a way that protects them from contamination.
