Site: Other-WINDJAMMER GALLEY
Violation: Half gallon cartons of soft serve yogurt mix with a product temperature of 46oF were stored in a mobile refrigerator.
Recommendation: Potentially hazardous food requiring refrigeration shall be stored at or below 45oF.

Violation: Soft serve chocolate yogurt mix was at 50oF in the storage compartment of one machine and vanilla mix was at 47oF in another machine.
Recommendation: Potentially hazardous food requiring refrigeration shall be stored at or below 45oF. Monitor the temperature of yogurt mix in the refrigerated storage compartments of soft serve yogurt and ice cream machines.

Violation: The areas behind the front cover of the Vitality juice machines were not easily cleanable.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Violation: The finish on many of the buffet food covers had worn off.
Recommendation: Non-food contact surfaces of equipment shall be easily cleanable and maintained in good repair.

Violation: Some of the clean Vitality juice cannisters with the plastic tubes were soiled with juice residue on the inside of the tube.
Recommendation: Clean the tubes with a brush designed for that purpose.

Recommendation: Non-food contact surfaces of equipment shall be cleaned as often as is necessary to keep the equipment free of accumulations of food or juice residues.

Violation: Employees had run out of soiled counter space and had placed soiled equipment in lexan bins on the deck.
Recommendation: Do not place soiled equipment to be washed on the deck.

Recommendation: All spray bottles of cleaning solutions shall be properly labeled identifying their contents.

Violation: A few bulkhead profile strips were loose. Several bulkheads were heavily dented.
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair and kept clean.
