Violation: OVERALL THE SHIP WAS IN EXCELLENT CONDITION. SHIPS PERSONNEL ARE TO BE COMMENDED FOR DOING AN OUTSTANDING JOB.

Site: Other-APPETIZER PANTRY
Violation: THE SEALANT ON THE BACK PLATE OF THE SLICER WAS LOOSE IN A COUPLE OF PLACES. THIS WAS ALSO NOTED IN THE VEGETABLE PREP PANTRY.
Recommendation: Food-contact and ice-contact surfaces must be constructed of materials that are nontoxic, smooth, corrosion-resistant, nonabsorbent, and durable under conditions of normal use. Food-contact surfaces also must be easily cleanable and free of difficult-to-clean internal corners, crevices, and fasteners.

Violation: THE INTERIORS OF THE VITALITY JUICE MACHINES WERE NOT EASILY CLEANABLE.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Violation: THE MANUAL FINAL RINSE COMPARTMENT WATER TEMPERATURE REGISTERED 178oF ON THE TANK THERMOMETER.
Recommendation: The thermometer shall be repaired or replaced.

Site: Other-CREW DISHWASHING
Violation: THE FINAL RINSE TEMPERATURE OF THE AUTOMATIC DISHWASHER WAS 160oF. IT WAS NOT IN ACTIVE USE AT THE TIME OF THE INSPECTION.
Recommendation: Automatic dishwashing machines utilizing hot water for sanitizing shall operate at a minimum of 165oF (74oC) measured at dish level.

Site: Other-CREW POT WASH
Violation: STAINLESS STEEL PAN COVERS WERE STORED IN UNDRAINED LEXAN BINS. SOME STANDING WATER WAS NOTED IN THE BINS.
Recommendation: After sanitizing, all equipment and utensils shall be air dried. Cleaned and sanitized equipment and utensils shall be handled and stored in a way that protects them from contamination.
