Violation: THERE WAS STANDING WATER IN MANY ICE MAKERS POTENTIALLY OVERFLOWING INTO THE ICE BINS BELOW.
Recommendation: Ice is considered a food product and should be protected from contamination.

Violation: SEVERAL CHART RECORDER GRAPHS HAD HALOGEN RESIDUAL LEVELS BELOW .2 PPM FOR SEVERAL HOURS WITHOUT A COMMENT ON THE GRAPH EXPLAiINING THE REASON.
Recommendation: A review of records from the ship's automatic chlorine or bromine analyzer must show that the ship has maintained adequate amounts of free halogen residual in the water distribution system since the last inspection of the vessel. The review will be deemed unacceptable if the records show a free halogen residual of less than 0.2 ppm for more than 24 consecutive hours. Charts shall be initialed and dated daily and retained for at least 12-months.

Violation: THE SCREEN AT THE BASE OF THE WATER SLIDE WAS SOILED WITH DEBRIS.
Recommendation: Recirculation and disinfection systems used with swimming pools and whirlpools must be operated and maintained in good repair in accordance with the manufacturer's specifications, recommendations and standards. Recirculating swimming pool water must be filtered and disinfected by bromination or chlorination to maintain a free halogen residual of between 1.0-2.0 ppm. Ensure that the screen at the base of the slide is cleaned daily.

Violation: PORTABLE SOUP KETTLES HAD ELECTRICAL CORDS THAT DRAPED ACROSS COUNTER SURFACES.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Violation: THE DISTANCE FROM THE PREPARATION AREA TO THE NEAREST HANDWASHING STATION WAS 30, 35, AND 41 FEET RESPECTIVELY. THIS WAS NOTED ON THE PREVIOUS INSPECTION. THIS ITEM IS SCHEDULED FOR DRY DOCK IN SEPTEMBER.
Recommendation: It is required that a handwashing sink be installed and located to permit convenient use by all employees in food preparation and warewashing areas. Note points will be deducted if item is not completed during the next inspection.

Violation: THE FINAL RINSE SPRAY WAS NOT IN THE PROPER POSITION DURING THE TIME OF THE INSPECTION. THE WAREWASH MACHINE WAS IN SERVICE AT THE TIME OF THE INSPECTION.
Recommendation: To prevent cross-contamination, kitchenware and food contact surfaces of equipment shall be washed, rinsed and sanitized after each use and following any interruption of operations during which time contamination may have occurred.

Violation: THE BLAST CHILLER WAS OUT OF SERVICE. THE PART WAS ON ORDER AND PRODUCT TEMPERATURES WERE WITHIN LIMITS.
Recommendation: Potentially hazardous food must be refrigerated in a manner that promotes rapid cooling. Such foods prepared in large volumes or quantities can be rapidly cooled utilizing such methods as shallow pans, agitation, quick chilling in freezer units, or ice baths external to the food container. The use of blast freezers are very effective in reducing temperatures quickly.

Violation: SEVERAL COLLARS (3) FOR THE MAGNETIC DOORS WERE MISSING ON THE DECKHEAD.
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean.

Violation: A SLUDGE LINE WAS DRAPED OVER THE POTABLE WATER LINES DURING BUNKERING OPERATION.
Recommendation: Potable water hoses must be handled with care to prevent contamination by dragging ends on the ground, pier, or deck surfaces or by dropping the hose into the harbor. If sludge line is used during bunkering ensure that it is place underneath the potable water lines to prevent contamination.

Violation: ONE OF THE SNEEZE GUARDS ON THE SERVING LINE DID NOT PROVIDE ADEQUATE PROTECTION TO THE FOOD PRODUCT.
Recommendation: Display tables or buffet lines for service of unpackaged foods must be effectively shielded so as to intercept any source of contamination from the consumer. Appropriate food shielding (sneeze guards) should be provided.

Violation: THE FINAL RINSE WAS NOT IN THE PROPER POSITION AT THE TIME OF THE INSPECTION. THE SPRAY WAS SHOOTING HORIZONTALLY. THE MACHINE WAS IN SERVICE AT THE TIME OF THE INSPECTION.
Recommendation: Dishes and utensils must be cleaned and sanitized utilizing spray-type dishwashing machines. These machines shall be properly installed and maintained in good repair. Machines shall be operated in accordance with manufacturers' instructions, and utensils and equipment placed in the machine shall be exposed to all dishwashing cycles. All automatic detergent dispensers, wetting agent dispensers, and liquid sanitizer injectors shall be properly installed and maintained.

Violation: A PIPE ABOVE THE DISHWASH MACHINE WAS DRIPPING CONDENSATION ON THE CLEAN SIDE OF THE WAREWASH LINE.
Recommendation: Ventilation systems shall be adequately designed to remove a large percentage of the hot humid air in food service areas to prevent workers from perspiring profusely and to prevent the accumulation of condensation on deckheads.

Violation: SEVERAL GASKETS IN ONE OF THE SOFT SERVE MACHINES WERE WORN AND PARTIALLY MISSING. THERE WAS SOME STAIN ON THE PLUNGERS AND A VERY SMALL AMOUNT OF CHOCOLATE MIX IN ONE OF THE TUBES ON THE DISPENSING HEAD.
Recommendation: All food preparation equipment, utensils, tableware, other food contact surfaces and food storage containers shall be washed, rinsed, and sanitized after every use or change in use. A food surface is that surface of equipment or utensil with which food normally comes in contact and those surfaces from which food may drip, drain, or splash back onto other surfaces normally in contact with food.
