Violation: THE WALK-IN REFRIGERATOR HAD CUT HONEYDEW AND CANTELOUPE MELONS PREPARED ON 01/18/2002 WITH TEMPERATURE READINGS OF 48F AND 49F RESPECTIVELY. THE AMBIENT AIR THERMOMETER INSIDE THE UNIT HAD A TEMPERATURE READING OF 40F. ALL OTHER FOODS WERE BELOW 41 F.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less.

Violation: THE INTERIOR SPACE OF THE VITALITY JUICE MACHINE WAS NOT EASILY CLEANABLE.
Recommendation: 7.4.2.2.6 Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Recommendation: 7.4.5.1.2 Nonfood-contact equipment shall be maintained in good repair and proper adjustment including: (1) Equipment shall be maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Violation: LOOSE SEALANT WAS NOTED ON THE OUTER RIM OF THE SOUP KETTLES.
Recommendation: The loose sealant should be made to fit firmly around the outer rim of the kettle.

Violation: IT WAS OBSERVED THAT THE POT WASHING STAFF WAS NOT IMMERSING CLEANED ITEMS IN THE FINAL SANITIZING RINSE WATER FOR AT LEAST 30 SECONDS.
Recommendation: 7.5.6.1.1 In a manual operation, if immersion in hot water is used for sanitizing: (1) The temperature of the water shall be maintained at 77C, (171F) or above; and (2) The food-contact surface shall be immersed for at least 30 seconds.

Violation: THERE WAS A LOOSE PROFILE STRIP LOCATED IN THE CORNER OF THE COOLER.
Recommendation: The profile strip should be re-attached in the corner of the cooler.

Violation: SOME OF THE PLASTIC STOPPERS WERE MISSING FROM THE DOOR FRAME. AN INVERTED NIPPLE WAS ALSO NEEDED FOR THE DOOR FRAME.
Recommendation: The plastic stoppers should be replaced around the door frame and inverted nipples should be provided for the door locking mechanism.
