Violation: THE HALOGEN LEVEL FOR THE POTABLE WATER BUNKERING WAS MEASURED AT 1.87 PARTS PER MILLION ON THE FIRST READING AND 2.22 PARTS PER MILLION ON THE SECOND READING.
Recommendation: 5.2.1.1.1 Potable water shall be continuously halogenated to at least 2.0 mg/L (ppm) free residual halogen at the time of bunkering or production with an automatic halogenation device.

Violation: SCOOP HANDLES WERE IN THE FOOD IN TWO OF THE ROLLING BULK STORAGE BINS.
Recommendation: 7.3.3.4.2.5 During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: (5) In a clean, protected location if the utensils, such as ice scoops, are used only with a food that is not potentially hazardous.

Violation: A METAL FOOD CHOPPER BOWL WAS SCORED AND DIFFICULT TO CLEAN.
Recommendation: 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Violation: THE END OF THE SCRAPPING TABLE ADJACENT TO THE PULPER HAD STANDING WATER IN THE END AND MILDEW WAS FOUND IN THE ROUGH SEAMS.
Recommendation: 7.4.2.4.6 Equipment compartments that are subject to accumulation of moisture because of conditions such as condensation, food or beverage drip, or water from melting ice shall be sloped to an outlet that allows complete draining.

Violation: FINAL RINSE PRESSURE ON THE CONVEYOR TYPE DISHWASHER WAS LESS THAN 10 PSI CAUSING FLUCTUATIONS IN THE FINAL RINSE TEMPERATURE MEASURED AT DISH SURFACE.
Recommendation: 7.5.2.1.2 Pressure measuring devices that display the pressures in the water supply line for the fresh hot water sanitizing rinse shall have increments of 7 kilopascals (1 pounds per square inch) or smaller and shall be accurate to 14 kilopascals ( 2 pounds per square inch) in the 100-170 kilopascals (15-25 pounds per square inch) range.
