Site: Other-GALLEY DECK 4 - BAKERY
Violation: A LEVER SHOULD BE INSERTED BETWEEN THE ROLLER BELT ON THE TOP AND BOTTOM OF THE DOUGH ROLLER AFTER EACH CLEANING TO ALLOW THE BELT TO AIR DRY AND TO PREVENT MOLD GROWTH FROM MOISTURE.

Violation: CUTTING BOARDS WERE FOUND SCRATCHED AND PITTED.
Recommendation: 7.4.5.1.3 Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: THE GASKET SEAL ON THE INSIDE OF THE DOOR TO THE POTATO PEELER WAS BROKEN, CRACKED AND LOOSE.
Recommendation: 6.3.2.2.3 Nonfood-contact equipment shall be maintained in good repair and proper adjustment including: (2) Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Recommendation: 7.4.2.4.9 Temperature measuring devices shall conform to the following guidelines: (1) In a mechanically refrigerated or hot-food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot-food storage unit.

Recommendation: 7.5.4.1.3 A warewashing machine and its auxiliary components: (1) A warewashing machine's conveyor speed or automatic cycle times shall be maintained accurately timed in accordance with manufacturer's specifications.

Violation: THE GAUGES ON THE POTWASH MACHINE WERE NOT WORKING.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Violation: THE SANITIZE COMPARTMENT OF THE THREE COMPARTMENT SINK ONLY HAD A CONCENTRATION OF 10 PPM CHLORINE. THE THREE COMPARTMENT SINK WAS NOT IN USE AT THE TIME.
Recommendation: 7.5.6.2.3.1 The sanitizing solutions shall be used with the following concentrations: (1) A chlorine solution shall have a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).

Violation: THERE WAS A CONDENSATE BUILD UP ABOVE THE LOADING SIDE OF THE FLIGHT TYPE WAREWASH MACHINE.
Recommendation: 7.4.3.2.1 Ventilation hood systems and devices shall be sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.
