Violation: THE POTABLE WATER TANKS ARE CLEANED ONCE PER YEAR. A 50 PPM SANITIZING SOLUTION WAS SPRAYED ON THE TANKS. THIS PRACTICE DOES NOT ALLOW FOR THE REQUIRED 4 HOUR CONTACT TIME FOR PROPER SANITZATION.
Recommendation: 5.3.4.1.4 Disinfection following potential contamination shall be accomplished by increasing free residual halogen to at least 50 mg/L (ppm) throughout the affected area and maintaining this concentration for 4 hours.

Violation: THE SERVING UTENSILS FOR THE BUFFET LINE WERE STORED ON THE HANDLES OF THE UNDER COUNTER REFRIGERATION UNITS AND/OR ALTO SHAMS.
Recommendation: 7.3.3.4.2.1 During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: (1) In the food with their handles above the top of the food and the container.

Recommendation: 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Violation: THE SEAM BETWEEN THE CUBER AND ICE BIN OF THE CORNELIUS ICE MACHINE HAD AN OPEN CELL FOAM SEALANT PROTRUDING INTO THE ICE BIN. THE FOAM SEALANT WAS SATURATED WITH MOISTURE.
Recommendation: 7.4.1.1.4 Limitation of lead use shall be as follows: (1) Ceramic, china, crystal utensils, and decorative utensils such as hand painted ceramic or china that are used in contact with food shall be lead-free or contain levels of lead not exceeding the limits for specific utensil categories as allowed by law. (2) Pewter alloys containing lead in excess of 0.05% may not be used as a food-contact surface. Violation: THE HINGES TO THE ALTO SHAAM AND HALO HEAT HOT HOLDING AND COLD HOLDING CABINETS WERE CORRODED. TWO HINGE COVERS WERE MISSING FROM TWO SEPARATE ALTO SHAAM HOT HOLDING CABINETS.
Recommendation: Replace corroded hinges. Replace missing hinge covers.

Violation: AN UNDERCOUNTER DISHWASHER WAS POSTED OUT OF ORDER. ACCORDING TO SHIP PERSONNEL, THIS ITEM IS NEVER USED AND IS SCHEDULED FOR REMOVAL DURING THE APR/MAY 2004 DRYDOCK PERIOD.
Recommendation: Repair or replace undercounter dishwasher. This item is necessary to clean utensils used in this area and and to prevent cross-contamination with items washed in the main dishwash area. This item was also considered an important component to the operation under the construction standard.

Violation: BOTH THE GLASS WASH AND DISHWASH MACHINES WERE OPERATING AT A HOT WATER FINAL SANITIZING RINSE TEMPERATURE ABOVE THE MAXIMUM (174 F AT PLATE LEVEL AND 194 F AT THE MANIFOLD) THE GAUGE READINGS WERE 232 F AND 206 F RESPECTIVELY. THE ENGINEER STATED THAT THE FINAL RINSE THERMOMETER PROBE IS LOCATED IN A TANK UNDER PRESSURE BENEATH THE MACHINES. ALTHOUGH THERMOMETER PROBES FOR WASH AND RINSE COMPARTMENTS ARE REQUIRED TO BE LOCATED IN THE RESPECTIVE TANKS, A HOT WATER FINAL SANITIZING RINSE THERMOMETER PROBE IS TO BE LOCATED AT THE ENTRANCE TO THE MANIFOLD, ACCORDING TO THE VSP OPERATIONS MANUAL 2000. DISH LEVEL MEASUREMENTS IN BOTH MACHINES REGISTERED 180-185 F. THIS INDICATES THAT THE GAUGE TEMPERATURE READING FOR THE GLASSWASH MACHINE WAS ACTUALLY INACCURATE. A GAUGE READING OF 232 F EQUATES TO A DISH LEVEL TEMPERATURE OF 212 F.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. 7.5.2.2.5 A warewashing machine shall be equipped with a temperature measuring device that indicates the temperature of the water: (1) In each wash and rinse tank; and (2) As the water enters the hot water sanitizing final rinse manifold or in the chemical sanitizing solution tank.

Recommendation: 7.5.6.1.2 In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F). (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.
