Violation: THE OVERALL RECORD KEEPING FOR THE POTABLE WATER, AS WELL AS SWIMMING POOL AND WHIRLPOOL SPA HALOGEN MONITORING WERE OUTSTANDING.

Site: Other-SWIMMING POOL AREA
Violation: A FLOATATION DEVICE WAS NOT PROVIDED AT THE SWIMMING POOL. THERE WAS A "BOAT HOOK" INSTEAD OF A SHEPHERD'S HOOK PROVIDED.
Recommendation: Provide a floatation device with a length of line attached that is 1.5 times the width of the swimming pool. Replace the boat hook with a shepherd's hook. 6.4.1.2.1 Easy access shepherd's hook and approved floatation device shall be provided at a prominent location near each public swimming pool.

Site: Other-WHIRLPOOL SPA
Violation: THERE WAS NO DOCUMENTATION THAT MONTHLY CORE SAMPLES OF THE GRANULAR FILTER MEDIA WERE COLLECTED AND TESTED FOR EXCESSIVE ORGANIC MATERIAL ACCUMULATION.
Recommendation: 6.3.1.1.5 The granular filters shall be opened at least monthly and examined for cracks, mounds, or holes in the filter media. A core sample of the filter media shall be inspected for excessive organic material accumulation using a recommended sedimentation method.

Site: Other-JETTED BATH TUBS IN SUITES
Violation: THE LOGS FOR THE JETTED BATH TUBS IN THE SUITES INDICATED THAT THEY WERE DISINFECTED ONLY ON EMBARKATION DAYS, BUT SOME OF THE CRUISES LASTED 15 DAYS.
Recommendation: 6.3.3.1.1 Private whirlpool spas located in individual passenger cabins shall be cleaned and disinfected, including associated recirculation systems, between occupancies or weekly, whichever is more frequent.

Violation: THE SHELLSTOCK TAGS WERE NOT IN CHRONOLOGIC ORDER CORRELATED TO THE DATES WHEN THE SHELLSTOCK WERE SERVED.
Recommendation: 7.3.2.3.2 Shellstock shellfish tags shall: (1) Remain attached to the container in which the shellstock are received until the container is empty. (2) Be maintained by retaining shellstock tags or labels for 90 calendar days from the date the container is emptied by using an approved record keeping system that keeps the tags or labels in chronologic order correlated to the date when the shellstock are served.

Violation: SPACES ON THE BLAST CHILLER LOG WERE LEFT BLANK. THERE WAS NO INDICATION THAT THE COOLING OF THESE FOODS WAS ADEQUATELY MONITORED. A REVIEW OF THE BLAST CHLLLER LOG NOTED THAT SOME OF THE FOODS WERE PLACED IN THE BLAST CHILLER UNDER 140°F. SOME OF THESE FOODS WERE 120°F WHEN PLACED IN THE BLAST CHILLER. THERE WAS NO INDICATION THAT THE COOLING OF THESE FOODS WAS MONITORED STARTING AT 140°F TO ENSURE THAT THEY COOLED TO 70°F WITHIN 2 HOURS..
Recommendation: 7.3.5.2.1 Cooked potentially hazardous food shall be cooled: (1) Within 2 hours, from 60°C (140°F) to 21°C (70°F); and (2) Within 4 hours, from 21°C (70°F) to 5°C (41°F) or less.

Recommendation: 7.4.2.2.1 Multiuse food-contact surfaces shall be: (1) Smooth; (2) Free of breaks, open seams >1 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel such as screwdrivers, pliers, open-end wrenches, and Allen wrenches.

Violation: THE FORMICA AT THE WAIT STATIONS WAS CHIPPED. GAPS AND SEAMS WERE NOTED AT THE WAIT STATIONS AROUND THE DECORATIVE WOOD PANELS AND BETWEEN THE SECTIONS OF GREEN MARBLE. THE INSIDE STAINLESS STEEL PANELS WERE SEPARATING FROM THE WAIT STATION DOORS.
Recommendation: 7.4.1.1.9 Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. 7.4.2.2.6 Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: THE WASH WATER TEMPERATURE WAS TESTED AT 128°F WHILE THE DATA PLATE NOTED A MINIMUM WASH WATER TEMPERATURE OF 160°F. THIS UNIT WAS PUT OUT OF SERVICE. THE FINAL RINSE TEMPERATURE WAS ADEQUATE.
Recommendation: 7.5.4.1.3 A warewashing machine and its auxiliary components: (1) Shall be operated in accordance with the machine's data plate and other manufacturer's instructions. (2) A warewashing machine's conveyor speed or automatic cycle times shall be maintained accurately timed in accordance with manufacturer's specifications.

Recommendation: 7.7.4.2.1 Decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, shall be cleaned as often as necessary.

Site: Other-INTEGRATED PEST MANAGEMENT
Violation: THE WRITTEN INTEGRATED PEST MANAGEMENT (IPM) PLAN DID NOT PROVIDE DOCUMENTATION OF ACTIVE MONITORING AT DIFFERENT TIMES OF DAY. THE PLAN ONLY PROVIDED FOR PASSIVE MONITORING USING INSECT TRAPS. ADDITIONALLY, THERE WAS NO DOCUMENTATION OF TRAINING.
Recommendation: 8.1.1.1.3 The Integrated Pest Management Plan shall include provisions for active monitoring including pest sighting logs for the operational areas of the vessel and training for crew members in charge of log completion. 8.1.2.1.3 The training of the pest-control personnel shall be documented in the Integrated Pest Management Plan.
