Violation: Bread and pastries were not under the sneeze guard.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: The sliced fruit was not placed under a sneeze guard. The ship's staff reported that on occassion, the food items are placed out for self-service.

Violation: There were loose fibers along the edges of the cloth belt of the dough sheeter.

Violation: The sealant used on the backplate of the slicers in the galley and deli was not approved for food contact. Staff stated that a new sealant was on order.

Recommendation: Ensure that cleaned equipment and utensils, laundered linens, and single-service and single-use articles are stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 150 mm (6 inches) above the deck.
