Site: Recreational Water Facilities-Baby Splash Zone Records
Violation: The daily records for the Baby Splash Zone were on a pre-printed form. This form had the sample time for the second IDEXX sample as 1700. On most days the Baby Splash Zone did not close until 1800. The variance states that the second IDEXX sample is to be taken after the area is closed and before superchlorination. Staff stated that the samples were taken after closing.
Recommendation: Ensure that the records indicate the actual time that the second samples are collected.

Site: Galley-Deck 3 - Beverage Station
Violation: A wait staff member was observed rinsing both hands in a preparation sink at the beverage station after returning to the galley and before dispensing drinks. The handwash station was only 12 feet away in the same area.
Recommendation: Ensure that food employees clean their hands and exposed portions of their arms with a cleaning compound in a handwashing sink by vigorously rubbing together the surfaces of their lathered hands and arms for at least 20 seconds and thoroughly rinsing with clean water and pay particular attention to the areas underneath the fingernails and between the fingers.

Site: Buffet-Deck 5 Staff Mess - Beverage Station
Violation: The bulk milk dispensing refrigerator was labeled "time" on the exterior door. The area was not in operation during the inspection at 10:15 am, but staff stated that the coffee station was open from breakfast through dinner. The interior of the bulk milk dispenser had a partially full bag of milk in the left position with a label with 0700-1100 as the set-up and discard times. The right position had a full and unopened bag of milk with no discard label affixed. The written time as a control plan noted only that the bulk milk stations in messes were on time control. No service hours or label information was given. Staff stated the full milk was placed in this refrigerator/dispenser in the morning because two are normally needed. The inspector expressed concern that the full container would not be discarded as required at 11 am, but was assured by staff that it would. The inspector marked the top of the unopened bulk milk bag with his pen. On a return inspection of this dispenser at 12:30 there was one partially full bag of milk in the left position and nothing on the right. The time label displayed a time of 1055 - 1455. On close inspection of the top of the bag the black mark made earlier was present, confirming this was the milk which was to have been discarded at 11am. The bag was removed and discarded.
Recommendation: If time only, rather than time in conjunction with temperature, is used as the public health control for a working supply of potentially hazardous food before cooking, or for ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption, ensure that (1) The food is marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control; (2) The food is cooked and served, served if ready-to-eat, or discarded, within 4 hours from the time when the food is removed from temperature control; and (3) The food in unmarked containers or packages or marked to exceed a 4 hour limit is discarded.

Site: Galley-Cold Pantry
Violation: The previous cleaned honeydew melons had the manufacturer/producer stickers still affixed to them. In one case the ink from the label had stained the outer rind of the melon.
Recommendation: Ensure that raw fruits and vegetables are thoroughly washed in water to remove soil and other contaminants before being cut, combined with other ingredients, cooked, served, or offered for human consumption in ready-to-eat form.

Violation: The handle of the scoop used for the scrambled eggs was in contact with the eggs between uses.
Recommendation: During pauses in food preparation or dispensing, ensure that food preparation and dispensing utensils are stored: (1) In the food with their handles above the top of the food and the container.

Site: Buffet-Staff Mess - Soup Section
Violation: A portable soup pot was at one end of the buffet, outside of the sneeze shield. There was a simple hinged lid on this soup pot. The lid was not self-closing and this was a self-service station.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: A sheet pan of a yellow cake was stored on top of a trolley without a cover or lid. Another sheet pan of cherry cake was uncovered in this same walk-in freezer.
Recommendation: Ensure that all items are covered.

Violation: The power cable to the bulk milk dispenser was draped on the countertop, making cleaning difficult.

Violation: Several handles for Sea King undercounter hot and cold hold units were broken. This was also noted in the buffet. The crew indicated that work orders have been submitted.
Recommendation: Ensure that nonfood-contact surfaces of equipment and utensils are designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Violation: The beer supply lines leading from the technical space to the temporary beer tap on the counter were draped on the counter, making cleaning difficult.
Recommendation: Permanently install the beer tap and ensure that the supply lines are not draped on the counter.

Violation: The Legos had recently been cleaned and sanitized. Several Legos had not been separated and had water between the connected pieces.
Recommendation: Ensure that the Legos are unassembled so that all contact surfaces are sanitized.
