Item No.: 08
Site: Potable Water-Potable Water Tank Coating
Violation: Potable water tanks 6 center, 8, and 9 were painted inside with an approved product in April 2011, but the record indicated only that the paint was applied according to the manufacturer's instruction. There was no data on the curing or drying times and temperatures following application, and no statement that the drying or curing was done according to the manufacturers specifications. Potable water tank #31 was painted in May 2011 and potable water tank #10 was painted in January 2011 with the same lack of comment regarding drying and curing.
Recommendation: Ensure that interior coatings on potable water tanks are approved for potable water contact, and all manufacturer's recommendations for application, drying, or curing are followed. Ensure written documentaion for the coating used and recommendations followed are avaialble for review during inspections.

Site: Food Service General-Crew Gastrointestinal Illness Reporting
Violation: A galley steward experienced gastrointestinal illness symptoms at 7 pm on 22 June and reported to the medical facility at 1:25 am on 23 June. The electronic work history indicated that this steward worked from 7:30-9:30 pm on 22 June. A cook trainee experienced gastrointestinal illness symptoms at 11 am on 15 June and reported to the medical facility at 9:24 am on 16 June. The electronic work history indicated that this cook trainee worked from 8:11 am to 12:12 pm, then worked another shift from 12:39 pm to 4:33 pm on June 15. Both food workers met the definition of gastrointestinal illness cases.
Recommendation: Ensure that food employees suspected of, diagnosed with, or exposed to any communicable diseases caused by Salmonella typhi, Shigella spp., Escherichia coli O157:H7, or hepatitis A virus, or other communicable diseases that can be transmitted by food, are restricted from working with exposed food, warewashing equipment, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles. The restricted individual shall not return to the above duties until they are symptom free for a minimum of 48 hours.

Site: Buffet-Lido Pantry #1
Violation: The bread and condiment sections of the buffet line did not have side sneeze guards. Passengers were approaching and serving themselves from these sections from the dining room after having already passed through the buffet line.
Recommendation: Install side shields for the bread and condiment section of the buffet counter.

Site: Galley-Forward Dining Area
Violation: Several holes and corroded screws were inside the left and right sides of the five toaster ovens in this area. These toaster ovens are only used to toast sliced bread.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Site: Galley-Forward Dishwashing Area
Violation: The auxiliary upper spray arm rinse nozzle farthest right from the soiled side on the flight-type conveyor dishwashing machine was not operating at full pressure. This was corrected during the inspection.
Recommendation: Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.

Site: Galley-Aft Dining Area
Violation: The interior of the ice cuber compartment protective panel on the Conelius ice machine closest to the hot line was visibly soiled. The machine was taken out of service and sanitized during the inspection.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch. Ensure that food only contacts surfaces of equipment and utensils that are cleaned and sanitized.

Site: Dining Room-Elation
Violation: Three small tables that were pre-set had side plates that were not covered or inverted. This was noted on the last inspection. One of these three tables also had silverware that was not covered. Staff noted that the dining room would not be open for several more hours.
Recommendation: Ensure that clean equipment and utensils are stored: (1) In a self-draining position that allows air drying; and (2) Covered or inverted.

Site: Dining Room-Crew and Officer Restrooms
Violation: The unisex restroom door outside the crew and officer dining rooms was not self-closing.
Recommendation: Ensure that toilet rooms are completely enclosed and shall have tight-fitting, self-closing doors which shall be kept closed except during cleaning or maintenance.

Site: Bar-Lido Pool Area
Violation: Grout and tile were recessed under the entrance door of the bar. Recessed grout was also found between the tile and deck wood panel juncture immediately outside the entrance of the bar.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Site: Galley-Pastry Preparation Areas
Violation: Several areas of the deck/bulkhead junctures throughout the pastry preparation areas had rough surfaces and recessed grout. These hard to clean areas were causing a white build-up especially in the corners from the cleaning solution being used.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Site: Galley-Dishwashing Area and Clean Dish Sorting
Violation: A few areas behind the conveyor type dishwashing machine and underneath the clean dish sorting area had recessed grout and tile with rough surfaces.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Site: Dining Room-Lido Pool Area
Violation: Two house flies were flying over the dining area where passengers were eating lunch.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.

Site: Dining Room-Destiny Dining Room
Violation: Two live fruit flies were noted in this dining room. There was no active service at the time of the inspection, but cleaned glassware and utensils were set on tables throughout.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.

Site: Bar-Lido Pool Area
Violation: One house fly was flying over the bar area. The bar was open and drinks were being prepared but the fly was observed on food or food-contact surfaces.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.
