Item No.: 08
Site: Potable Water-Mineralizers
Violation: There was no air gap at the common backflush drainage for the three mineralizers. A flexible hose was connected to the discharge pipe and extended into the receiving funnel of the drain. This was corrected.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).

Site: Potable Water-Deck 11 Spa/Pool Trunk
Violation: There was a hose with a spray nozzle connected to a faucet next to the filter cleaning station. A non-continuous pressure type backflow preventer was connected to the faucet.
Recommendation: Ensure that a continuous pressure-type backflow preventer is installed when a valve is located downstream from the backflow preventer.

Violation: There was a leak at the intermediate vent of the backflow prevention device on the potable water line to the ice dispenser on the starboard side of the beverage area.
Recommendation: Ensure that backflow preventers are maintained in good repair.

Violation: The written time control plan did not indicate that the undercounter refrigeration units on the buffet lines were on time control. The units were labeled as time control.
Recommendation: Update the written time control plan to provide a list of all temperature control units that are used for time control.

Site: Housekeeping-Deck 10 Forward Room Storage Locker
Violation: There were cans of soft drinks, cans of beer, and bottles of water stored along with cleaning solutions and other housekeeping articles.
Recommendation: Ensure that food is protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck. Store food items only in food storage designated areas.

Site: Housekeeping-Deck 5 Forward Room Storage Locker
Violation: There were several pillow cases filled with mini bar items, such as candy, liquor, and soft drinks stored along with housekeeping carts and other housekeeping articles.
Recommendation: Ensure that food is protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck. Do not store food items inside pillow cases. Store food items only in food storage designated areas.

Violation: In the technical compartment below and to the left of the soda gun, the penetration in the back of the compartment for the multi-flow lines was not sealed. This was corrected.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Bar-Java Cafe
Violation: In the technical compartment below and to the left of the espresso machine, the pipe penetrations into the floor of the compartment were not smooth and were holding water.
Recommendation: Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: The stainless steel electrical conduit for the ice dispenser on the port side of the beverage area was loose at the bulkhead and at the dispenser.
Recommendation: Secure the electrical conduit at each end.

Site: Preparation Room-Stack Oven
Violation: The gasket between the glass panels and the stainless steel frame was loose in several areas. The gasket was a fabric material that was not easy to clean.
Recommendation: Re-install the gaskets so that the fabric material is not exposed.

Violation: There were black particles in the back of the water bath of the ice machine. According to the staff, this machine was last cleaned about one month ago.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Violation: There was no waste receptacle at the handwash station. No one was working in the pantry at the time of the inspection.
Recommendation: Ensure that a handwashing facility includes a sink, soap dispenser, single-use towels dispenser, and waste receptacle.

Site: Preparation Room-Handwash Station Paper Towel Dispensers
Violation: The older bulk-style paper towel dispensers with the lock on the side did not consistently provide enough material to pull the next paper towel. This was primarily observed at the handwash stations in the food preparation rooms and around the provision areas, but similar dispensers were located in other food service areas. Newer bulk-style dispensers were in some food areas and these did not have the same dispensing problem.
Recommendation: Replace the old bulk-style paper towel dispensers to ensure that paper towels are always available at the handwash stations.

Site: Dining Room-Tsar's
Violation: Soft sealant was used for the coving at the waiter station cabinet/deck junctures.
Recommendation: Ensure that bulkheads and deckheads have smooth, hard finishes, and light colored surfaces. Remove the soft sealant and replace with coving made of a smooth, hard, durable material.

Site: Dining Room-Bistro
Violation: There was no coving at the deck/bulkhead juncture at the entrance end of the waiter stations.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Site: Integrated Pest Management-
Violation: The current version of the vessel's integrated pest management plan was dated 15 April 2009. There was no indication that this document had been evaluated since that date.
Recommendation: Ensure that the vessel's Integrated Pest Management Plan is evaluated for effectiveness every 2 years or whenever there is a significant change in the vessel's structure such as a renovation or operation.

Site: Children Area-
Violation: The entrance of the jungle gym playground was heavily soiled with dust in several areas where children can touch during regular play. This area was previously cleaned and not in operation at the time of the inspection.
Recommendation: Ensure that surfaces that children touch with their hands are cleaned and disinfected at least daily with products labeled by the manufacturer for that purpose.
