Site: Recreational Water Facilities-LOGS
Violation: THERE WERE TWO DAYS, MAY 16 AND MAY 23 WHERE THE SWIMMING POOL CHART RECORDER CHARTS INDICATED THAT THE HALOGEN LEVEL WAS LESS THAN 1.0 PPM FOR GREATER THAN 3 HOURS. THE SWIMMING POOL MANUAL TESTING LOGS INDICATED THAT THE LEVELS WERE 1.0 PPM OR GREATER. THERE WERE NO COMMENTS ON THE CHARTS INDICATING WHAT THE CAUSE OF THE DISCREPANCIES WERE OR HOW IT WAS CORRECTED.
Recommendation: Document the discrepancies between the manual halogen readings and the chart recorder readings.

Site: Galley-CREW GALLEY
Violation: THE FOOD CONTACT SURFACE OF THE FLAT TOP GRILL WAS SEVERELY PITTED, MAKING THIS AREA DIFFICULT TO CLEAN.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: THE GLASS PORTION OF THE LOWER TIER OVEN DOOR WAS MISSING.
Recommendation: Repair the oven.

Site: Galley-POTWASH AREA
Violation: SOILED POTS AND PANS WERE STORED IN CLOSE PROXIMITY TO THE CLEAN STORAGE SHELVING UNITS, ON THE SOILED LANDING OF THE DISHWASHING AREA, AND A TROLLEY. THIS AREA IS UNDER SIZED FOR THE AMOUNT OF POTS AND PANS THAT ARE EXPECTED TO BE WASHED.
Recommendation: Ensure that drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.

Violation: THREE PREVIOUSLY CLEANED COFFEE URNS WERE FOUND SOILED AND STORED AS CLEAN.

Violation: CLEAN ITEMS WERE STORED WET AND STACKED, IMPEDING AIR-DRYING. THIS AREA DID NOT APPEAR TO BE DESIGNED TO HANDLE THE LARGE VOLUME OF EQUIPMENT NEEDING CLEANING.
Recommendation: Ensure that drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.

Violation: THE HANDWASHING STATIONS WERE NOT FULLY INSTALLED IN THE BUFFET ISLANDS WITH THE CARVING STATIONS. THE PIPING HAD BEEN INSTALLED AND ONLY THE SINKS WERE AWAITING INSTALLATION.
Recommendation: Complete the installation of the handwashing stations.
