Violation: THE RECORD KEEPING FOR THE POTABLE WATER SYSTEM, SWIMMING POOLS AND WHIRLPOOL SPAS WAS EXCELLENT.

Violation: THIS VESSEL HAS A DATA LOGGING SYSTEM INSTALLED AT THE FAR POINT HALOGEN ANALYZER WHICH IS CURRENTLY SAVING THE DATA TO A FLOPPY DISK. THE DATA IS PRINTED AT THE END OF EACH 3 AND 4 DAY CRUISE. THE ENGINEER IN CHARGE OF THE SYSTEM MAINTAINS A RECORD OF ALL OF HIS DAILY WORK, NOT JUST THE POTABLE WATER SYSTEM CALIBRATION VERIFICATION.
Recommendation: Maintain a dedicated log to record the calibration verification and any unusual water events or print trend charts each day and record the same information on these daily charts.

Violation: SHIPPING CONTAINERS FOR CLINICAL SPECIMEN SUBMISSION WERE NOT AVAILABLE. THIS IS A NEW REQUIREMENT IN THE AUGUST 2005 VSP OPERATIONS MANUAL.
Recommendation: Ensure that at least 10 clinical specimen collection containers for both bacterial and viral agents (10 each), as well as proper shipping containers and labels are maintained onboard the vessel.

Violation: THE GI ILLNESS LOG DID NOT COLLECT INFORMATION ON THE PRESENCE OF ABDOMINAL CRAMPS, HEADACHES, OR MUSCLE ACHES. THIS IS A NEW REQUIREMENT IN THE AUGUST 2005 VSP OPERATIONS MANUAL.
Recommendation: Use the new standardized GI Illness Log that collects the additional information of abdominal cramps, headaches, and muscle aches.

Site: Food Service General-
Violation: SINGLE CHECK VALVES WERE INSTALLED ON THE POTABLE WATER SUPPLY LINES TO THE COFFEE AND JUICE MACHINES THROUGHOUT THE GALLEY AND BAR PANTRIES.
Recommendation: Ensure that backflow preventers are installed when air gaps are impractical or when water under pressure is required. Ensure that a continuous pressure-type backflow preventer is installed when a valve is located downstream from the backflow preventer. Ensure that all installed backflow prevention devices are vented.

Violation: A BOLT WAS INSERTED INTO THE INTERMEDIATE VENT ON THE BACKFLOW PREVENTION DEVICE ATTACHED TO THE POTABLE WATER LINE SUPPLYING THE COFFEE MACHINE. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: Ensure that backflow prevention devices are correctly installed and maintained. Vents must be open to determine proper operation of the device.

Violation: THE SNEEZE GUARD ON THIS HOT SERVICE LINE DOES NOT PROTECT THE FOOD ON DISPLAY. THIS SNEEZE GUARD IS SCHEDULED FOR MODIFICATION DURING THE UPCOMING DRY DOCK IN NOVEMBER 2005. THIS IS A REPEAT ITEM FROM THE INSPECTION DECEMBER 2004.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Site: Buffet-CENTER PANTRY
Violation: A COLANDER WAS NOTED SETTING DIRECTLY ON THE DECK UNDER THE TILTING PAN. IT WAS STATED THAT THIS WAS USED TO COLLECT FOOD WASTE WHEN CLEANING THE TILTING PAN.
Recommendation: Ensure that a floor stand is provided and used so food service equipment is not placed directly on the deck.

Violation: CRACKED TILES AND BENT METAL WERE NOTED AT THE BASE OF SEVERAL SUPPORT PILLARS, MAKING CLEANING DIFFICULT.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.
