Site: Galley-Windjammer Dessert Stations
Violation: A chaffing dish was located at each dessert station and there was no sneeze guard. The chaffing dishes could be left open and leave food unprotected.
Recommendation: Protect food on display from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; self-closing hinged lids; or other effective means. Install side protection for sneeze guards if the distance between exposed food and where consumers are expected to stand is less than 1 meter (40 inches).

Site: Galley-Deck 5 - Bakery
Violation: The undercounter warewasher was out of service since 27 May.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Violation: Wet wiping clothes were draped on the rims of five empty sanitation buckets.
Recommendation: Restrict wiping cloths to the following: (4) Wet wiping cloths used with a freshly made sanitizing solution and dry wiping cloths are free of food debris and visible soil.

Violation: A wiping cloth was immersed in a soiled sanitation solution. This was corrected.

Violation: The right most dispensing port of the previously cleaned juice machine had residues of orange juice. This was corrected.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: Two large lexan boxes were stored stacked and wet inside the liquor cabinet. This was corrected.
Recommendation: Store clean equipment and utensils in a self-draining position that allows air drying, and covered or inverted.

Violation: The handwash station at the front counter could not reach a water temperature of 100F. This was corrected.
Recommendation: Ensure handwashing sinks are equipped to provide water at a temperature of at least 38C (100F) through a mixing valve or combination faucet.

Violation: The toilet for the male food employees was not flushing. This was corrected.
Recommendation: Keep toilet fixtures clean and in good repair.

Violation: The light bulbs of the warming unit were not shielded or shatter-resistant.
Recommendation: Ensure light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles.

Violation: Christmas decorations were stored along with food equipment and utensils. This was corrected.
Recommendation: Ensure only articles necessary for the food service operation are stored in food preparation, food storage, and warewashing areas.

Site: Children Area-3 - 5 Activity Area
Violation: The space between the vinyl couch cushions was soiled with dust and debris.
Recommendation: Ensure surfaces that children touch with their hands are cleaned and disinfected at least daily with products labeled by the manufacturer for that purpose.
