During the operation of the rack-type warewasher, the crew members were putting a waiter's tray on top of racks full of cups and passing the racks through the machine. This prevented that the cups were washed and sanitized effectively by all water sprays. Staff stated that the crew members were putting the trays on top of the cups to avoid the cups to be moved out of the trays due to the high water pressure. There were cups found in the prewash and wash tanks too. Staff stated that they were going to try to lower the water pressure.
