Stripe or paint these lines at 5 meters (15 feet) intervals and on each side of partitions, decks, and bulkheads, except where decor would be marred by such markings, including potable water supply lines in technical lockers.

Violation:
A gap was observed between the lower half of the door and the frame when fully closed that allowed a set of folded papers to be passed from the outside to the inside of the three door undercounter reach-in refrigerator #6.9506B. The gap was greatest on the leftmost door of this undercounter refrigerator. Staff stated that there was a full ship assessment of the refrigerators with a solution planned that involved new doors, door gaskets, and latches.

Recommendation:
Ensure nonfood contact equipment is maintained in good repair and proper adjustment including: (1) Equipment maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines; (2) Equipment components such as doors, seals, hinges, fasteners, and kick plates are kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Black sediment was noted in the recirculating water bath of the ice machine, directly below the pump. This was noted on the last inspection. Staff reported they were replacing all ice machines onboard, and had a requisition order which stated two units would be replaced each month.

Recommendation:
Ensure food contact surfaces of equipment and utensils are clean to sight and touch. Ensure food only contacts surfaces of equipment and utensils that are cleaned and sanitized.

An employee was observed with a wiping cloth inside a cleaned cup in the pre-check area beside the active dishwashing machines. The inspector checked the cloth and it was wet. Before the final meeting the inspector returned to the same dishwash and another staff member was observed drying just cleaned cups again in the pre-check dishwash area. The cloth was again wet. The same violation was noted in the 30 November inspection of the ship in the same dishwash area.

Recommendation:
Launder linens that do not come in direct contact with food between operations if they become wet, sticky, or visibly soiled.

A layer of frozen condensate was noted inside the deckhead light fixture to the inside left of the walk-in freezer #37 entry door. Additionally, a pool of frozen condensate was on the top storage shelf to the left of the entry door inside this same walk-in freezer. No food was contacted.

A rough surface was noted on most of the deckhead panels over the front bar area due to a weathering. The weathering was causing the laminated covering over each panel square to peel away in spots which extended from the panels. A rough and difficult to clean surface was created.
