Site: Recreational Water Facilities-Wading Pool, Forward Pool and Slide
Violation: The Wading Pool (used as children's pool) and Forward Pool with Slide were combined recreational water facilities, and had an inadequate turnover rate of 2.5 hours. Staff explained water supply for the Wading Pool comes from Forward Pool and water from Wading Pool goes to Forward Pool before going through recirculation system, through filtration and treatment. The variance is in a pending status since 4/2014.
Recommendation: Design recirculation systems and equipment, including chemical control equipment, UV disinfection systems, filter, and pumps to maintain adequate water chemistry control while operating at the following minimum turnover rates: (3) children's pool: 0.5 hours; (4) wading pool: 1 hour. Ensure an RWF slide that is combined with a pool has a turnover rate that matches the rate for the pool.

Site: Galley-Beverage station
Violation: Ice machine R3-14 had a chocolate food debris on the lid inside the machine. The crushed ice in the machine was also affected. The ice was discarded and the machine cleaned.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: Four previously cleaned mugs had an oval sticky substance adjacent to the handle on the exterior surface.

Violation: The deck in both the Lido and Main galleys contained a noticeable (one to two inches) amount of grey water from dishwashers. When walking in this area water was easily splashed potentially impacting clean dishware and cooking utensils.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; and (2) in a location where they are not exposed to splash, dust, or other contamination.

Violation: A food worker was observed continuously drying clean bowls with the same damp rag. The bowels were not allowed to drain properly and air dry before use.
Recommendation: Store clean equipment and utensils in a self-draining position that allows air drying, and covered or inverted.

Violation: A constant drip onto the deck was observed from the deckhead in the area. The area was closed and not in use and no dishes were impacted.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: The bulkhead beside the knife locker adjacent to the handwash sink had significant amount of food debris older that one day's accumulation. The area was closed and not in service.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: Over an inch of standing water was under the in use conveyor type plate washer. The area was constantly being squeegeed by a crew member with little effect. Water seemed to be leaking from the machine.
Recommendation: Ensure black and gray water is discharged to the vessel's wastewater disposal system and does not pool on the deck.
