Violation: The backflow preventer of combination oven 3-MG26 next to the soup kettles was soiled with a black residue. The area was not easily accessible due to the placement of the handwash sink.
Recommendation: Maintain backflow prevention devices in good repair. Ensure backflow prevention devices and air gaps are accessible for inspection, service, and maintenance.

Recommendation: Use only low profile, nonslotted, noncorroding, and easy-to-clean fasteners on food-contact surfaces and in splash zones. Prohibit the use of exposed slotted screws, Phillips head screws, or pop rivets in these areas.

Violation: The interiors of each of the three tandoor ovens in the aft starboard grill station had large cracks in the thermal cement liner that created difficult to clean areas.
