Violation: The reinforcing spring on the power cord on the tortilla dough presser had open construction and was difficult to clean.
Recommendation: Ensure nonfood contact equipment is maintained in good repair and proper adjustment including: (1) Equipment maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Violation: Condensate was noted on the back panel and on the overshelf above the left end of the bains marie. Excessive steam was escaping from around the insert pans. The unit was operated on a time control plan rather than temperature control. Pans were covered and the food being held was not being impacted by the steam not being extracted.
Recommendation: Ensure ventilation hood systems and devices are sufficient in number and capacity to prevent condensation from collecting on bulkheads and deckheads.
